Easy 3-Ingredient Apple Pancakes | How to make fluffy pancakes without eggs?

🍎 Ingredients

🍎 Using Japanese hot cake mix

Japanese hot cake mix 75g
Oat milk 75g
Apple, grated 1

🍎 Using Homemade pancake mix

All-purpose flour 65g
Sugar 10g
Baking powder 2.5g
Vanilla extract (optional) few drops
Oat milk 75g
Apple, grated 1

🍎 Caramelised Apple

Apple, diced
Coconut oil 1-2 tsp
Maple syrup 2 tbsps

1. Pass the hot cake mix flour through a sieve, mix with milk until completely smooth. If you are using your own pancake mix, mix flour, sugar and baking powder in a bowl before adding the oat milk.
2. Peel the apples, cut them into large pieces and remove the core, put the apple pieces in a food processor, and process for 5-10 seconds until you have grated apple pieces. You can also use a box grater instead.
3. Add the grated apple in the pancake mixture, stir gently until well-combined.
4. Place the greased ring molds in a pan with height, pour the mixture into the molds (until half full), cover the lid and cook for 10 minutes on a low heat, then flip the pancakes over, continue cooking on a low heat for 5-10 minutes, until the pancakes are cooked.
5. Caramelised apples: add coconut oil into a hot pot, cooke the apple dices on a medium-high heat for 5 minutes, until the apple dices are browned, add maple syrup and cook for a few more minutes.
