Lemon Flower Cookies
2/3 Cup (150 grms) Unsalted Butter
3/4 Cup Sugar
3 Egg Yolks
2 Tablespoons Lemon Juice (Sub w/Lime Juice, Orange Juice or Milk)
2 2/3 Cup AP Flour
1/4 teaspoon Salt
In the stand mixer with palett attachment cream butter and sugar until light and fluffy. Add egg yolks one by one, scrape sides of mixing bowl, add lemon juice until incorporated. With mixer in low add Flour and salt until it becomes a ball.
Divide dough in 3 equal parts and color each one with different food colors.
Form balls with hand about the size of a grape. Form flowers sticking center of 1 color and 6 around it with different color. Press on baking sheet w/paper and bake at 350 F preheated oven for 15-20 min or until golden brown. Let cool completely before you pick them up.
