How To Make Your Own DIY Vegan Cookie Decorating Kit! The Best Covid Lockdown Valentine’s Day Gift!

Valentine’s day is right around the corner! And we are going to make a Valentine’s Day gift that is ‘COVID lockdown friendly’!

But wait! What do you mean?

Well, we will bake some yummy vegan letter cookies to form our Valentine message, and pack them lovingly into a box, with colourful frosting and sprinkles. Then tie a bow, write a card and send it off to our loved ones! So the recipient not only gets a box of really yummy cookies, but a fun cookie decorating activity as well! Isn’t that awesome?!

(Makes 50-60 letter cookies)

VEGAN COOKIE INGREDIENTS:
– 420g flour
– 220g cold Nuttelex butter (cut into small cubes)
– 130g sugar
– 1 ‘flax egg’ (1 tbsp flaxseed powder + 3 tbsp water)
– 1 tsp vanilla extract
– 1/4 tsp salt
– 1.5 tsp baking powder

VEGAN COOKIE METHOD:
– Make the ‘flax egg’ first by combining the flaxseed powder and water. Allow it to rest for 15 minutes.
– Beat the cold Nuttelex butter and sugar on medium until light and fluffy.
– Add in the egg and vanilla extract.
– Mix the dry ingredients (flour, salt, baking powder) together separately.
– Turn mixer to the lowest setting and add in the dry ingredients a scoop at a time until the dough comes together (do not over-mix).
– Roll the dough to a thickness of 4-6mm and cut your letters with your alphabet cookie cutters.
– Bake at 160 degree celcius for 20 minutes on the lowest rack.
– Cool on the tray for 5 minutes and transfer to a wire rack to cool completely.

VEGAN ICING INGREDIENTS:
– 400g icing sugar
– 80g unsweetened nut milk (any kind)
– 1 tsp vanilla

VEGAN ICING METHOD:
– Whisk all the ingredients together.

TOOLS:
– Alphabet cookie cutters (ours are from Wilton)
– Rolling pin (preferably with guides, ours are from Joseph Joseph)

TO ASSEMBLE YOUR DIY COOKIE DECORATING KIT, YOU WILL NEED:
– a box with shredded paper to hold it all together
– piping bags to contain the icing
– your favourite sprinkles packed into small containers
– transparent bags to contain the cookies
– an instruction card (text provided below)
– a bow to tie the box up
– and your Valentine’s card

TEXT FOR THE INSTRUCTION CARD:
1.Snip off the tip of the icing bags.
2. Pipe the icing onto the cookies.
3. Decorate with sprinkles.
4. Let the icing dry at room temperature.
5. Enjoy!

TIPS & TRICKS:
– This icing can be stored in the fridge without hardening so you can make the cookies and icing in advance and store them in the fridge before packing and sending them out later!

SUBSTITUTIONS:
– You can substitute the ‘flax egg’ for a normal large egg if you do not need a vegan recipe.
– You can use regular butter instead of Nuttelex f you do not need a vegan recipe.
