How to Make GLUTEN-FREE Oatmeal Carrot Cookies: BONUS second batch of PROTEIN COOKIES

This week I had some leftover carrot pulp from juicing, so instead of throwing it in the compost I decided to make cookies out of them! Since it was my first time trying this recipe of course I made mistakes, so pay attention to the notes I make in the video on what I would change if I baked them again. Also as a bonus I made some HIGH PROTEIN COOKIES with the extra pulp which turned-out bomb.

OATMEAL CARROT COOKIE INGREDIENTS:
– 1½ cup gluten-free old-fashioned oats (the type of oat matters so don’t use quick oats like I did)
– 1 cup gluten-free flour (use 120g if it’s primary ingredient is rice flour)
– ¾ tsp baking powder
– ½ tsp baking soda
– ½ tsp ground cinnamon
– ¼ tsp ground ginger
– ⅛ tsp ground cloves
– ½ cup salted butter (1 stick)
– ¼ cup granulated sugar
– ½ cup packed brown sugar
– 1 large egg
– 1 cup shredded carrots (or carrot pulp)
– ½ tsp vanilla extract

PROTEIN COOKIE INGREDIENTS:
– 1½ cup old-fashioned oats*
– 1 cup unflavored protein powder*
– ¾ tsp baking powder
– ½ tsp baking soda
– ½ tsp ground cinnamon
– ¼ tsp ground ginger
– ⅛ tsp ground cloves
– ½ tsp salt*
– ½ cup coconut oil*
– ¼ cup granulated sugar
– ¼ cup packed brown sugar*
– 1 large egg
– ¾ cup carrot pulp*
– 2 Tbsp coconut flour*
– 2 Tbsp shredded coconut*
– ½ tsp vanilla extract
 * deviation from first batch of cookies
