How to make Crunchy Coconut Pecan Cookies from scratch



Learn to make my favorite cookie in the whole world. These are so good with a cup of tea or coffee. Tender coconut and tasty pecans combine with rice cereal to make a slightly chewy cookie with a bit of a crunch. Recipe is here in the description.
Crunchy Coconut Pecan Cookies

1 cup shortening

1 cup sugar

1 cup light brown sugar, firmly packed

2 large eggs

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon salt

1 cup crispy rice cereal

1 cup flaked coconut

1 cup chopped pecans

Beat shortening at medium speed with an electric mixer until fluffy. Gradually add sugars, beating well. Add eggs 1 at a time beating well after each.

Combine flour, soda, baking powder and salt. Gradually add to sugar mixture beating until smooth. Stir in cereal, coconut and pecans. Cover and chill for 10 minutes.

Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 325* for 10 minutes. Cool for 2 minutes on sheets then remove to cooling racks to cool completely.

[Music]hi y’all welcome to kitchen we’re goingto make crunchy coconut pecan cookies inmy mixer bowl I have 1 cup of vegetableshortening Crisco whatever brand-new isand we’re just going to clean that ok[Applause]I’m going to add 1 teaspoon of bakingsoda 1/2 a teaspoon of baking powder and1 teaspoon salt[Applause]okay our shortening is kinda creamy nowand in this fall I have one cup ofgranulated sugar and one cup of firmlypacked brown sugar that I chose to mixtogether and we’re gonna start havingthat sugar into that shortly just alittle bit of time and let them it[Applause]now I’m gonna stop the mixer and writedown the sides of my bowl I’m gonna makesure that shortening and sugar mix aswell together[Applause]she’s under the edge to it but I wantone at a time and I want him to beat himreally well[Applause][Applause]and that’s what you’re looking for justa really creamy mixture okay now we’regoing to start adding our flour so I’mgoing to turn it down just a notch andjust start gradually adding the flourmixture into it[Music][Applause]I’ve hacked we’ve mixed all of ouringredients together really well I’mgoing to add one cup of flaked coconutone cup of chopped pecans and one cup ofcrispy rice cereal rice krispieswhatever brand crispy rice cereal andwe’re just going to turn on the mixerjust enough to start that engine[Applause]okay my spatula and scrape-up my feederso it’s like that now what we want to donext is let me take this off and get mypole out okay but what we’re going to dois we’re going to just cover this bowland put it in the refrigerator and letit chill for 10 minutes and while that’sgoing on I’m going to preheat my oven to325 degreesokay we’ve let our dough rest now forten minutes in the refrigerator to chillnow we got to do is make our cookieswe’ve preheated our oven to 325 degreesand we’re just going to drop these ontothe cookie sheet about about two inchesapart I usually put about 12 2 cookiesheets and this is an ungreased cookiesheetokay we’re just gonna put those in ouroven and we want to set our timer for 10minutes okayso what we want to do now is just setthem on a cooling rack and you want toleave them on your cookie sheet forabout two minutes and then move them toa cooling rack and let it coolcompletely thank you all for comingwe appreciate it[Music]
