Here is a recipe for gluten-free oatmeal cookies. You’ll need:
– 200g of butter (room temperature)
– 150g of oatmeal (in form of flakes, bran or grounded. I used bran in the video.)
– 2 egg whites
– 100g of sugar
First mix butter, egg whites and sugar together. Butter lumps can be left, it will make cookies a little crunchier. Then add oatmeal and mix until the dough has an even texture. Form cookies and place on a tray with a baking paper. Bake for approx. 20 minutes at 180°C. I advise while baking to set timer for every 5 minutes and just check the color of your cookies.
Cookies can be enjoyed with a glass of milk.
