S’more Sandwich Cookies feature a chocolate biscuit with a nutella and marshmallow meringue filling. These cookies certainly make a great impression and are a favourite among the small business community.
CHOCOLATE BISCUITS
350g dark chocolate
100g unsalted butter
400g brown sugar
3 eggs
2 tsp vanilla extract
300g plain flour (all-purpose)
80g dutch cocoa powder
5 tsp baking powder
TOPPING
100 g Malt biscuits
FILLING
150g chocolate spread (or nutella)
MARSHMALLOW MERINGUE
2 cups caster sugar
1/2 tsp cream of tartar
1/2 cup water
4 eggs
