DELICIOUS DIABETIC FRIENDLY LOW NET CARB, ZERO SUGAR IRISH SHORTBREAD COOKIES
Make 12 servings

Prep Time: 10 minutes
Cook Time: 17 minutes plus 45 minutes cooling time
Total Time: 1 hour, 12 minutes with cooling time
Servings: 12

Ingredients

⅔ Cup Cabalose flour
⅓ Cup Cake flour
½ Cup Truvia sweetener
¼ teaspoon table Salt

Instructions

Preheat oven to 350 degrees. Fahrenheit

Cream together butter and sweetener with either a stand mixer or hand mixer.

Then sift together flours and slowly add them to creamed butter.

Then add salt and mix together.

Roll dough out onto a counter, then between 2 sheets of parchment paper, roll out dough into a rectangle that is ¼ of inch thick.

Bake the rectangle of dough on a parchment paper lined cookie sheet for 14 – 17 minutes, or until golden brown around the edges.

Let the baked dough cool in the pan for 5 – 10 minutes then move it to a cooling rack to cool completely.

Break cookies into desired sized pieces and enjoy.

Cookies can stored up 7 days.
