Ingredients:
• 225 g dark chocolate /8 oz
• 65 g butter / 1/4 cup + 1 tsp
• 100 g all-purpose flour / 7/8 cup
• 1 tsp baking powder
• 2 eggs
• 80 g sugar / 1/3 cup + 1 tbsp
• 80 g brown sugar / 1/3 cup + 1 tbsp
Step 1
In a medium saucepan, melt the chocolate together with the unsalted butter. Stir until the chocolate is completely melted and creamy then set aside and let it cool at room temperature.
Step 2
In a small bowl combine 1 teaspoon of baking powder with the flour and a pinch of salt. Stir until well combined.
Step 3
In a large bowl add the eggs, white and brown sugar and using a hand mixer, beat them until you get a pale mixture. Add the melted chocolate butter mixture and continue to mix at medium speed. Gradually add the flour mixture until you get a thick mixture. Our chocolate brownie cookies dough is ready.
Step 4
Transfer it to a medium bowl, cover it with plastic wrap and place it in the freezer for 1 hour or in the fridge for 3 hours or overnight.
Step 5
Remove it from the freezer or fridge and take a spoon of the dough and start rolling it between your hand. Place the cookies on a large baking sheet lined with parchment paper and gently press them down. Make sure to leave enough space between each cookie because they will spread.
Step 6
Bake them at 180 ° C for 10 to 12 minutes. Remove them from the oven and let them cool.
You can also store them in a cookie box up to 2 weeks. They are simply delicious!
