Butterscotch Toffee Cookies with Michael’s Home Cooking

Crisp around the edges and soft in the middle, these cookies will make you smile 🙂 Easy to make with five ingredients. Makes 3 Dozen Cookies.

Ingredients:
2 eggs
1/2 cup vegetable oil
1 Betty Crocker Butter Pecan Cake Mix (15.25 ounce/432 grams)
1 package of Heath Toffee Chips with chocolate (8 ounces)
1 package Butterscotch Chips (11 ounces)

Mix your eggs and oil until very well combined.
Add your cake min dividing into thirds with three additions.
**NOTE** This will give your mixer a workout and is difficult, but it is doable. Use a stand mixer if possible, you will be happy you did.
Add both of your bags of chips and stir them in with a wooden spoon or rubber spatula.

Bake @ 350F on un-greased pan for 10 to 12 minutes
Mine took 12 minutes
Use a cookie scoop if you have one to measure your cookies or use about 1 and 1/2 tablespoons per cookie. (You know use the measuring spoon tablespoon)
Space the cookies two inches apart from each other.
After Baking:
Allow to cool for 2 to 4 minutes, then remove from cookie sheet to a cooling rack to cool completely.

I think these would be awesome made with chocolate chips instead of the butterscotch too.

These are crisp around the edges when warm, but do loose that crispness after a few hours.

[Music]let’s make some cookies we’re gonna usea cake mix a better pecan cake mix herewhere I use a half a cup of oil Ibelieve two eggs use some butterscotchbaking chips and some heath baking chipsand these are the heath chips that havesome chocolate on them so let’s getstartedwell here’s the two eggs I’m gonna addthe vegetable oil if you use canola oilor any oil that doesn’t have any flavorthat’s a half a cup we’re gonna mix itup I have that all mixed up I mixed itup on high until I didn’t see any moreoil floating around the edges I’m gonnaadd a third of the cake mix at a timeand mix it up well I got that mixed up Imixed up the cake mix in there in threebatches want to add heat chips and thebutterscotch chips and try and mix thisup try and mix it I have to tell youthat hand mixer of mine that I had therehad a very rough time mixing that up soif you have like a big KitchenAid mixeryou know a stand mixer I would suggestusing that instead so let me get thismixed up I’m using a cookie scoop toscoop the cookies one in two inchesapart and then put these in your 350degree oven 350 degrees for 10 to 12minutes all right here are my firstbatch of cookies they bake for 12minutes I’m gonna let them cool down fortwo minutesthen after two minutes remove them to acooling rack here’s the cookies thenmakes three dozen plus like three orfour extra so free dozen they’re niceand crispy around the edges a little bitsoft in the middle and they are verygood they are very sweet and go greatwith ice creamit goes so good with ice cream and thenlike caramel sauce on the ice cream ofthen they would be perfect that way sothank you so much for watching
