This is the Best Gingerbread Cookie Recipe that always comes out! These Easy Gingerbread Cookies are one of the best Christmas cookies to bake with the kids. It’s so fun to make and delicious to eat!
INGREDIENTS
2 cups all-purpose flour
1 large egg
½ cup unsalted butter, softened to room temperature
½ cup light or dark brown sugar
½ teaspoon baking soda
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1 teaspoon cacao powder
2 teaspoons honey
Zest of 1 lemon, optional
PREPARATION
1. In a large bowl sift all dry ingredients. Add lemon zest and mix all together, using a spatula.
2. In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter, honey and sugar on medium speed until completely smooth and creamy.
3. Next, beat in egg on high speed for 2 full minutes.
4. Add dry ingredients into the wet ingredients and mix until combined.
5. Divide dough in half and place each onto a large piece of plastic wrap. Chill at least 30 minutes.
6. Preheat the oven to 350˚F (180°C). Line a baking sheet with parchment paper; set aside.
7. Remove 1 disc of chilled cookie dough from the refrigerator. Roll it to an even 1/4-inch thickness between two sheets of parchment paper. Cut into desired shapes with a cookie cutter. Place shapes 1 inch apart on prepared baking sheets. Re-roll dough scraps until all the dough is shaped. Repeat with remaining disc of dough.
8. Bake for about 9-10 minutes.
9. Allow cookies to cool for 5 minutes on the cookie sheet. Transfer to cooling rack to cool completely. Once completely cool, decorate as desired.
* Store cookies in a tightly closed container at room temperature for up to 1 week.
