hi this is a Polish chef today I’m gonnalearn how to make this wonderful peasantbread never baked bread before butheaven are good instructor helps this isSusanmy instructor hi everyoneno durable tea oh there comes myinstructor a better behaved so the firstthing we’re gonna do is take our saltput it in the flour we’re using breadflourhow am i doing so far Vic mix it in andtake your warm water and just gentlypour it over the top of the flour wedon’t want to mix it in and take youryeast and sprinkle it over so we’ll justlet this sit for two minutesand that East will soften up all rightso this yeast has softened now we’rejust going to mix this up all right soI’m going to now mix this for threeminutes are you ready yes on your marks[Music]that’s about three minutes all right soyou can see the dough has come togethermore it’s been 2 hours and our dough isready it’s doubled in size so this isready for the next step which is goingto be to proof it and we’re going to beusing this basket that we got in Polanda proofing basket and if you don’t havea proofing basket you can use a woodenball or regular ball and these types ofproofing baskets are much more availablein the States there even though theseare important but there you can buy themonline fairly easily or in kitchensupply stores these are called Banattons so we will today be using a woodenball and Stroeve esque straw basket thenhow do you say this in Polish closer sowe’re gonna prepare our proofing bowl orbasket we’re gonna put a clean towel inthere these are ones that I made out ofmuslin but you can use it to towelsomething light is better than somethingand of course clean so we’re just goingto sprinkle this generously with flourand then we’re going to I forgot to letyou put these aside while we’re gettingthe dough ready so generously flour yoursurface and then scrape your dough ontoit but before you do it give it a littleshape hold on shaping in the bowl themore shaping you give it a less stickyit’s going to be and then plop it onyour flouryou can use your scraper to help youshake this or you can do it with yourfingers also I’ll kind of show you bothways the dough is sticky so you’re gonnahave to use flour but you never want toput a lot of flour into the dough isn’tthat right that’s right that’s right youdon’t never want to do this so thesimplest way to shake this is to justkeep pulling towards the center thinkabout this rounding this area you wantto stretch it and round it over rightand then we’re gonna pinch the bottomthis is one of the hardest things for abeginner bread maker to do is shapingthe dough then I’m gonna just flour ithow are you doing quite excellent so nowwe’re going to take those baskets thatwe had earlierI can make sure that this is wellfloured you don’t want this to stick tothe towel and then just place your doughupside down you want the side that’sgoing to show on the top down and thenjust put a little more flour on the topand then just cover it up loosely youwant to allow it to you want to allowspace for it to grow and then I takethis bowl and just stick it on the topto kind of help stop it from drying outand now we’ll just let these rise untilthey’re double alright our dough is justabout readyand how do we know that it’s almostready oh you have to poke it a littlebit comes up should stay down and it’salways stay down okay you failed thatoneso our oven is now preheating to 450degrees and we’re going to put in ourcast-iron skillets I’m using twodifferent ones here one is I 12-inchand theirs has the ten and a half inchskillet so we’ll put these in there andby the time the oven is preheated thoseskillets will be hot enough and readyfor us to put our bread in there see youin a bitthe oven is preheating I’m gonna get mybeer cold her oven has been preheatedit’s probably been about 15 or 20minutes so I’m gonna take out one of thepans and show you how to put the breadin there these pans are very heavy andthey’re very hot so please be carefulI’m gonna unwrap my dough here andbasically I want to get it so that thethis part is on the bottom of the panit’s not sticky so I think I can just dothis by hand I’m going to just take itout onto my hand and just gently placeit into the bottom of the pan I’m gonnanow slash it I like to use a sharpserrated knife for thisand to give it a little extra rise inthe oven I’m going to spritz it withsome water and then just put this in theoven now Darrius will do the other oneI’m just gonna repeat my wonderfulinstructor over here unwrap this I’mgonna / no no no no that’s the bottomlook you got a tip that over into yourhero thank you very muchtip it and then and then you’re gonnaput it into the pan there you goI’m gonna score this slice it there wego let’s take a peek they then I’m gonna use acutting board and then we’ll flip itthis off and then just pick it up withthe parchment paper and put it rightinto the hot
