hello guys welcome to eggshells diaryand today we’re making rustic bread itis a simple recipe but it does take alittle bit of time so if you would liketo bake a fresh loaf of bread in themorning you should make the dough thenight before this recipe is going togive you two loaves of bread so withoutfurther ado let’s get started first ofall add one gram of dried yeast into the780 milliliters of warm water now putthe yeast water aside grab one kilogramof strong flour and mix it with 20 gramsof salt now we’re going to mix the waterand flour together until it’s justcombined we’re going to cover it up witha damp kitchen cloth and let it rest for20 minutes[Music]after 20 minutes we’re going to startfolding our bread we’re gonna do fourfolds every 20 minutes when folding yourdough your hands has to be wet so thedough wouldn’t stick to your hands wedon’t want to use any additional flourbecause it would result in a tougherbread fold the dough from the sidestowards the middle after first fold isdone over it with a damp kitchen clothagain and let it rest for additional 20minutes as I mentioned before we’regoing to do four folds with every foldyou’re going to notice that the dough isgetting smoother and smoother[Music]after the 4th fold your dough should besilky smooth at this point we’re goingto cover our pot with a cling film andwe’re going to leave our dough to proofovernight for around 12 hours okay guysso after 12 hours your dough should looksomething like this as you can see it’snice and bubbly improved a lot but nowall we have to do is take out our doughon the floured surface lightly does thesides of the dough to make it easier totake it out[Music]divide it into two equal portions shapeour dough by stretching and pulling thenwe’re going to put it into two flouredbowls to proof for another hourand then it’s time to bake[Music]all the DOS proofing pre-heat your ovento 230 degrees Celsius or 450 degreesFahrenheit the important thing is tohave some sort of tray at the bottom ofthe oven preheating together with theoven the reason behind it is that wehave to create some sort of a steam whenbaking bread so at the same time as weput the bread inside the oven we’regoing to pour some boiling water on thehot tray that is already in the oven andthat way we’re going to create steam sothat dough doesn’t build the crust tooearly so we can prove a little morebefore building that beautiful browncrust also with the oven preheat yourbaking pan the one that you’re going tobake your bread in to bake the bread I’mgoing to use my cast-iron skillet[Music]so after 40 minutes your bread is doneas soon as we take our first bread outwe’re going to put the second one in letit cool down at first it might seem alittle tough but as it cools down it’sgoing to soften up as you can see thisbread is not that hard to make it justtakes a little bit of your time and youcan have this beautiful homemade rusticbread on your table so that is it guys abeautiful rustic bread I hope youenjoyed watching this video if you didgive it a thumbs up and don’t forget tosubscribe to my channel share this videowith your friends leave a comment belowwhat is your favorite bread and what doyou think about this recipe if you wouldlike to see a written recipe it’s goingto be on my blog the link for that isgoing to be in the description box belowand as always thank you so much forwatching guys and I will see next timewould another new recipe[Music]
