Hi Bold Bakers.While in quarantine I’ve seen that you guys
have been baking up a storm.Now I know a lot of you have been taking this
time to perfect your breadmaking skills.Now I have heard that there’s a shortage
of yeast out there however.So I’ve got an amazing quick bread recipe
for you that can be made with pantry staplesthat can be whipped up by hand in just minutes.And I’m here too, and you might hear baby
George during the episode too.So that’s right, my husband Kevin is behind
the camera and we’ve got baby George inthe corner.Between the three of us we’re gonna nail
this episode.So we’re gonna get started in a nice big
bowl.So into our bowl we’re gonna add in some
oats.Now for this recipe you can use old fashioned
rolled oats or you can use quick cooking oats.Either work really well.So into this we’re gonna add in some milk,
plain yogurt.If you don’t have yogurt you can always
use sour cream, or a mix of both.Next we’re gonna add in some oil, now you
can use a neutral oil so something like Sunfloweroil, vegetable oil, canola oil.You can even use olive oil in this but you
might want to save that for your cooking.Do you not like my baking?I think George prefers olive oil.Next we’re gonna add in some honey for a
little bit of sweetness, and then we’regonna crack in an egg.So if you don’t eat egg you can always use
flax egg in this and that will work reallywell.And then with a fork we’re just gonna whisk
all these together.You might have noticed that I added oats into
the wet ingredients and the reason I did thatis so that they hydrate while they’re in
the wet ingredients.So when it’s mixed like this we’re gonna
set it over to the side for around 45 minutesor so, let those oats soak, and then we’re
gonna add in the rest of our ingredients.So into this bowl we’re gonna add in some
white flour, some whole wheat flour, bakingpowder, baking soda, and some salt.And just give this a quick mix together.So like I said this is a quick bread which
means it’s not leavened with yeast becausewe don’t have any.This is leavened with baking powder and baking
soda.I think this is a quick enough recipe to get
done before George’s nap.I’m hoping George is gonna go for a nap
soon.So there’s my dry ingredients, here I have
my wet ingredients, the oats have soaked andthey’re just gonna go straight in there.So like I said you don’t need a mixer to
make this, all we’re gonna use is a woodenspoon and our hands.And then with a swift move of the spatula,
fold this mix all together.It’s similar to how we mix a soda bread.You just want to do a few mixes, it’s especially
important with this recipe that you don’tover-mix it so you end up with a lovely soft
loaf.So just a few mixes, this is looking great.So here’s an important part, once you do
mix it you want to get it into the oven fastand I’ll tell you why.The chemical reaction has started between
the milk the yogurt the baking powder andthe baking soda, and it starts to react.You want that to happen in the oven.So here I have my baking pan and it’s buttered.This is my Bigger Bolder Baking pan and it’s
non stick.Then just pour your dough into there.And then with a spatula just spread it out
evenly in your tin.So you’ll notice this is a lovely soft dough,
you’ll want to get the same texture thatI did.If it’s a little bit dryer, feel free to
add more milk.But there you go, it’s quick and easy.Then we’re just gonna scatter some rolled
oats on top.Make it look nice and pretty.So like I said let’s get this into the oven,
and remember all of the baking instructionscan be found on BiggerBolderBaking.com.As for now, here’s one I made yesterday
and it’s nice and cool so we can cut intoit.So now what makes this quick bread lovely
and different from soda bread is once youcut into it you’ll notice it’s really
soft.And if you give it a squeeze it’s a lovely
soft bread, it’s not dense the way sodabread can be.And then if you look at the crumb there there’s
all these lovely bubbles in the crumb.It’s just a really lovely bread.Now I love this as is with a bit of Irish
butter, it also makes amazing toast.It’s just spongy, soft and bubbly.A little bit sweet, and it has all that goodness.This is such a simple bread and I bet that
you have the ingredients right now to handto make this.And it was quick enough that we could make
it before George took his nap.Make sure to check out all my other bread
