when I was a little kid and I firstlearned about Irish soda bread I waspumped because I pictured bread one ofmy favorite foods made with two thingsthat my mom basically always forbid inthe house Lucky Charms cereal and orangesoda you could say I was a littledisappointed when I tried it for thefirst time but that has all changed sodabread isn’t just fast fun flavorful andfiber packed it also lends itselfsurprisingly well to alliteration in thespeedy bread category soda bread trumpsall other contenders even so-calledquick breads like banana bread come frommore ingredients and take a littlelonger goingto introduce the a controversialingredient yeah I know you’re waitingfor it an egg and the egg I add is forrichness and it also kind of helps yougive a more kind of get a more sort ofsolid loaf don’t really have here in the u.s. iswholemeal flour it’s whole wheat flourthere’s really coarse than ground so youget these big pieces of bran and germthat help break up the structure of theloafergive you this really nice coarse crockAmerican Hobie it’s actually groundpretty fine so the best way to get thatcoarseness back is to add some wheatgerm it’s a wheat bran okay real quickwheat primer this is a wheat berry thestarchy white core is the endospermit’s where white flour is ground fromand where the gluten forming proteinsglutenin and gliadin are found then wehave the fiber rich bran which acts as aprotective coating on the wheat berryand finally the oil-rich germ okay let’sget back to the recipe I’m starting withwhole wheat flour and adding someall-purpose flour in a two-to-one ratiothe all-purpose flour will improvegluten development and give us morestructure and lift then we add our brandin our germ we’re gonna add a littlesugar and the star of our show got outof that baking soda we’re gonna go offthe traditional script but we’reactually gonna add some of beepowder to the mix this is double actingbaking powder meaning that we get aburst of carbon dioxide production whenit first gets wet and then a secondburst when he heats up in the oven thatcombination of baking soda and bakingpowder will give our loaf additionallift and the final dry ingredient issalt now for the buttermilk and nomessing around there it’s the source ofacidity that will react with the bakingsoda then we just use a rubber spatulato fold and mix up what am I talkingabout I got to get my hands in therelike the hood now we just shape into aroundrustic loaf score it don’t let thefairies out and then transfer it to acake ground to bake oh just look at thisgorgeous thing deeply   6. All of the soda bread I’ve ever seen in the states includes raisins. Anyone want to weigh in on that?

  7. I have noticed that baking soda will also give your bread a darker colour. Who’s noticed the same? Baking powder on the other hand won’t do that?!?!?

  8. No more anything left in the supermarket… Have to bake regular bread. Maybe when people stop panic buying, I’ll try to get some wheat germ and wheat bran.
