To bake this amazing moroccan campfire bread we have prepared our snack (traditional Moroccan bread, honey, Amlou, olive oil, mint tea and copcorn).
Preparation of moroccan campfire bread :
In a clay dish called in Berber Souss massa [Almid] a large glass of lukewarm water is poured / a tablespoon of sugar is desulphurized.
One tablespoon of baker’s yeast is added.
Then we add half a kilogram of flour and another half kilogram of fino.
A pinch of salt is added
We mix it by hand by pouring water until we have a homogeneous paste.
We knead it 5 Mn after we cover it and let it rest for about 10 minutes.
Then we cut the dough into small balls as you see.
After a little while we flatten the balls by hand, adding flour so that it doesn’t stick and when it becomes fine and takes the shape of a loaf of bread we cover it for a little while.
And then we light our wood fire in the traditional way of course.
And we put on the fire another dish of clay which is called in Berber [As’sli].
We turn the bread on both sides until it is puffed up, taking care that it doesn’t burn.
As you see our two teapots and on two other fires. Usually the tea is heated on the small fire.

When cooking on a campfire, please be safe and protect the countryside by fully extinguishing your fire. It’s also a good idea to bring oven gloves – open fire get very hot and your pots and rocks will quickly get too hot to handle. And always remember to wash your hands before you cook and eat.
