Coconut & Pineapple Bread (OHANA Breakfast Bread) – Cook With Me

In this video, I decide to bake one of my favourite breads, that just so happens to be from Walt Disney World!
It’s served at Ohana at the Polynesian Resort, and it really is delightful.
There will be a second video to follow this one, that makes the “Ohana Bread Pudding’ recipe too.

hello everyone welcome to anotherepisode of salivate of mates today weare going to be working on Ohana breadnow there is like a second part that youcan do to this where you make thisdelicious bread pudding with a bananafosters sauce which is basically like arum and sugar sauce which I willprobably do on another videobecause otherwise this will be supersuper long so as a heads up we aremaking the bread from scraps in thisvideo as usual the link for the recipeI’ve used will be available I haveconverted everything over to units forthe UK just to make it a little biteasier for those of us on this side ofthe pond it is basically a pineapple andcoconut bread so it’s a sweet bread it’sdelicious it will take what this is thisis a long recipe to cook because thebread is going to go from scrap lightit’s basically going to go all the wayfrom the beginning so it has to proveand stuff like that now there is arecipe available where you can do itwith brioche or french stick which iscompletely feasible however I’m gonnagive it a try doing the full full breadon this one so as usual I have got anice graphic for you with theingredients listed which I will show foryou[Music]now bear in mind one thing that we do iswhenever I’m making a recipe I tend tohalf the ingredients for it because onlya man died in the house so there’s nopoint us eating the sheer amount ofbread that this recipe would make so bewarned if there are a lot of you in thehouse or if you’re really hungry then dodouble why I’m making bit you everlooked at the original recipe versus theingredients I’m giving you I’m alwaysdoing on much a half version of what theactual recipe says now in the properrecipe this technically makes for Ohanaloafs so if you want four loaves of thisdelicious delicious bread and make it socool I will go and show you theingredients now okay guys so there aretwo parts to this recipe so the firstbit you want to make sure that you getdone first is the pineapple and coconutsort of mix that gets needed into thebread so you use crushed pineapple whatI did was I have got some frozenpineapple and I quickly chopped in afood processor so just break up a littlebit so you don’t have a massive clumpsof pineapple in the bread desiccatedcoconut some cornflour and some sugarfor this recipe now once again this is asweet bread so please don’t be surprisedat the amount of sugar that you’reputting in and if you are making thefull recipe you will notice that I havea lot less ingredients than you do so itcalls for high gluten flour I’ve justput bread flour in there just normalwhite flour in here also calls for somewater egg yolk shortening some yeast andsome more sugar so without further adolet’s get making to the bread okay sothe first thing you’re going to do ismix the cornflour in with the sugar andyou want to make sure that’s mixed inreally really well because you are aboutto mix it in with the desiccated coconutand the pineapple so make sure you mixthose two together separately and thencombine the corn flour and sugar in withtheand the coke once you finish with thatyou want to make sure you put it in thefridge for at least an hour just for itto mix together then you’re gonna putthe water egg yolk shortening flour saltsugar and instant yeast all togetherinside your KitchenAid or mixing bowlhave you’re doing it you can see I’mquite lazy here and I’m gonna be using aKitchenAid however you can just use yourhands there’s no problem doing that I’mjust lazy and using this insteadeventually when it all combines togetherand pretty much the mixture is not onthe side of the bowl you know it is goodand ready you’re gonna get ready toproof that so you want to take yourdough hook off or leave it in the bowland cover it with cling film and leavein a warm place I left mine in myconservatory to rise once it’s doubledin size you can then go and get thatready to start the spreading it outyou’re gonna put this on a flouredsurface and you’re gonna use a rollingpin ideally if you don’t have onepressing it out with your hands isabsolutely fine as you can see I’m doinghere you are about to get ready to putyour mixture in onto the dough as wellnow you spread the mixture across thedough and you’re basically going to foldthe dough over itself a couple of timesjust to combine that mixture you may getlittle pops where you get little chunksof pineapple come out or bits ofmoisture that’s not a problem just makesure you folded it over a couple oftimes you’re gonna get yourself a breadtin or a baking tin this one that Ipicked out was far too small so you’llsee in a minute I get another one nowyou want to cut it up into little stripsand when you put it into your pan you’llsee when I get the bigger pan in asecond why I mean but also make surethat you do grease that baking tin aswell because you don’t want the bread toget stuckso you can see it doesn’t properly fillthe tin at the moment we’re gonna put itin a oven to proof for until it getsabout halfway up the sides which you’llsee there I put my oven at this point onthe lowest possible setting then you’regonna turn your oven up to about 165degrees Celsius and you’re gonna put thebread in for about 25 minutesso my oven seems to always take a lotlonger than other ovens so you’ll seethat I’ll be getting out in a minuteit’s not ready so I put it in for alittle bit longer you know your ovenbetter than anyone so make sure thatit’s to your likingyou’ll see in a second what sort ofcolor you want from there so it’s niceand golden it’s almost ready at thispoint so I put it in for three moreminutes and there that’s the color thatyou’re looking for with this bread andthen because we’re using this towardsthe bread pudding recipe as well you cansee that I’m just cutting up into cubescuz this is gonna be put into a mixtureto soak ok so quite a few hours after webegan you will have seen me cutting upthe ohana breakfast bread and I’m gonnahave a little bit now we’ve put amassive chunk of it aside because we’regoing to be making the ohana breadpudding which is served in the eveningsat the Polynesian Resort so this is whatthey serve at breakfast and then they dolike a Bananas Foster bread sauce thatgoes with with this as a bread puddingbut we’re gonna try this so if you wantto see this next week’s episode will beus doing the Bananas Foster sauce so ifyou want to make this you want to waituntil we’ve done that however just thebread absolutely fine by itself hmm hmmso don’t know if this is gonna focuswith my facebut you basically get little chunks ofpineapple I think because I blended itup so small it’s quite nice because youdon’t necessarily get a massive chunk ofpineapple but it’s caramelized a littlebit mmm that is really good very goodsweetbreads you could probably have itwith just some a little bit like acinnamon bun where you make an icingsugar an icing mix and put that over thetop that’d be really good just like alunch treat that’d be great as just anormal cake I’m gonna try a bit ofbutter on it my assistant has come upwith a very good idea so I’m gonna I’mgonna have a bit of salted butter on itwhich I imagine would taste very good soyeah thank youthat is what Hot Cross Buns should bethat is mm-hmm banging sorrywhat’s forward that was that was goodI’m gonna toast some of that so makethis for however you wish you can haveit with this Bananas Foster sauce thatwill be out on another video you cantoast it and put some butter on itbecause that’s delicious having it byitself is absolutely fine and as I sayputting an icing sugar mix
