[Music]welcome to a whole new series calledbaking with Miss Nelly I had so much funlast Friday of making vanilla cupcakeswith all of you so I thought it would bea super great idea to do some morebaking videos so this morning I read astory all about this little redhead whoreally wanted to make some bread so weare gonna make our very own bread todaynow there’s something really cool aboutthis bread recipe this bread recipedoesn’t use the main ingredient thatmost bread recipe uses which is yeast soyeast helps make bread nice and fluffyand it makes the bread dog nice and bigso that when you bake it it has a reallynice texture inside of the bread and itmakes it have that really fluffy softbread texture that you usually love butthis one is I’m gonna use an East we’regonna use other ingredients to help makethat fluffiness let’s go ahead and startmaking our bread so the first thing I’mgoing to tell you about nigger bread iswhat ingredients are we using today solet’s go ahead and go through the listthe first thing that you’re going toneed is flour the next thing you’regoing to need is granulated sugar you’realso going to need salt just table saltis fine you’re also going to need bakingsoda we’re also using baking powderyou’re going to need buttermilk we’realso going to need mild cheddar cheesethat has been shredded you’re also goingto needchoice you also will need a zucchiniyou’re also going to need one egg andthe last thing that we’re using ismelted butter so the bread that we’remaking if you can’t guess the fiveingredients is a zucchini cheddar cheeseand chive buttermilk soft bread thisbread is gonna be super tasty when it’sall done so let’s go ahead and startmaking it the first thing that we’regoing to need to do and this is the partwhere you’re going to need to get yourmom and dad grandma grandpa aunt uncleto help you is you’re going to need topre-heat your oven to 350 degrees sothat it can warm up while we areprepping all of our bread so go aheadand do that and then the next thingyou’re going to need is a bread loaf tinit looks like this this one I believe isnine inches by five inches this is apretty good size so go ahead and grabone of these if you don’t have a breadtin in this shape you can always justuse a round tin and then your bread willjust be more of a round loaf rather thanthe lopes that you typically see whenyou go to the grocery store so whatwe’re going to do to get this already isgrab some parchment paper and we’regoing to put parchment paper in the panand what this does is help the bread notstick to the sides of the pan and thenwhen it’s all done cooking it’s a loteasier just to take the bread out usingthe leftover parchments that fall overthe side and then it helps it cool downfaster because you’re gonna take thatout right away so go ahead and get yourparchment paperand make sure that you rip up a goodamount so that you will have someleftover laying on the sides when youpush it down push it down make sure allthe corners you know we can put this tothe side so we’re ready to put our breadin okay so now let’s mix all of ouringredients together just like when wemade our cake batter we’re going to dothe same process as far as mixing ourdry ingredients and the wet ingredientsseparately and then mixing them togetherbecause in baking no matter if you’remaking a cake or if we’re making breador if you’re making muffins it’s alwaysimportant to make sure that all your dryingredients are really mixed andincorporated together and all of yourwet ingredients are also really mixingincorporated together before you combinethem it just really helps your better oryour mixture combine even bettertogether so that all the ingredients arereally incorporated so the first thingyou’re going to need to do is go aheadand grab that a large bowl that you’regoing to use my oven just preheated inhere beeping so it’s all ready to go andthen the first thing we’re going to dois put in our flour so go ahead and grabyour flour bag and we need two cups offlour so look at all of our measuringtools find the one that says the numberone and then cup ask someone to help youif you need help I need it all the waythe next thing that we’re going to addis two tablespoons of sugarso grab your granulated sugar look atall of your measuring tools and find theone that has the number one and then theletters TB SP because remember thatstands for tablespoon and we’re gonnaput in two of these you so the nextthing we’re going to add is our bakingpowder for baking powder we are going toneed one and a half teaspoons we’regonna use two different measuring spoonsfor this so go ahead and open up yourbaking powder and the first one thatyou’re gonna look for is the one thathas the number one and then TSP thatstands for teaspoon and we’re going toput one of these into our mixture therewe go and now you look for our 1/2teaspoon 1/2 teaspoon has the number 1a-slash the number two and then tsp soask help we need help finding it butwe’re gonna put one of these into ourdry ingredients there we go and now wehave all of our baking powder in thenext thing we’re going to add is ourbaking sodaso grab your baking soda and we’re gonnaput in half a teaspoon of baking soda sogo ahead and look for that teaspoon thatagain had the 1/2 TSP that’s 1/2teaspoon and put that on in therenow why baking powder and baking sodaare so important for this mixture isbecause these two things are going toact like the yeast that you tipsee in most breads because just like incake batters or cake mixtures bakingpowder and baking soda are used to helpmake it fluff up and get nice and thickso that’s what we’re gonna use thebaking powder and baking soda for todayfor our bread with no yeast is to helpmake the bread nice and big and fluffyso now the last thing that we need issalt so go ahead and grab your salt andwe’re gonna use that same 1/2 teaspoonthat we just used for our salt and we’regonna put in half a teaspoon of our saltnow remember salt pours out super fastso be careful when you’re using saltjust like that for that in there now wehave all of our dry ingredients in ourbowl so before we move on and mix thisI’m going to go ahead and grab mykitchen towel because remember lastmonth it’s always important to have akitchen towel nearby and just kind ofwipe up all the mess that came fill upthe flour and the sugar move that to theside as wellit’s important to keep your counterswhat you okay so now that we’re allready you’re gonna grab your whiskremember it looks like this and we’regonna whisk and stir all of thistogether until it’s all nice and mixedand incorporated and you can’t see theshirt the big part dissolve where thebaking soda anymore you kind of just seethe flour there we go tap off the sideeverything is nice and mixed togethernow you all the dry ingredients ready togo the next thing that we’re going to dois mix our wet ingredients together soagain I’m using my stand mixer if youdon’t have a stand mixer you can use ahand mixer or just a whisk either oneworks so let’s go ahead and get my bowlor my stand mixer and we’re going to addin our first wet ingredientsit so the first thing we’re going to addin is our buttermilk and we need 1 cupof buttermilk so go ahead and grab yourbuttermilk and then look at all of yourmixing cups and grab the one that saysthe number one and then cup ask help ifyou need helpso when you’re pouring your buttermilkremember you gotta be super carefulbecause we don’t want anything to pourout of our measuring cup so go aheadpour it on in there fill it all the wayto the top and then slowly a little bitand put it into your bowl there we gojust like thatso now the next thing that we’re goingto add to our bolt is our egg so goahead and grab your egg I’m only goingto need one egg and remember I alwaysrecommend cracking your egg on thecounter not on your bowl because itmakes a clearer line when you crack iton the counter whereas if you crack iton the bowl there’s more chance theactual getting into the egg itself andthen into your batter we don’t want itso just lightly drop it down on thecounteronce you hear it crack go ahead and pickit up find the crack and then open upyour egg there we go so now let’s goahead and mix this together so on mystand mixer I am using the whiskattachment again which looks like thisbecause that would really help just mixall of this bread batter together solet’s go ahead and now the whilewhisking I can go ahead and start onnumber one let it mix for a little bitand then move it up to number two andwhat you want and you want for the eggyolk to fully break and incorporate inwith the buttermilk so let’s go aheadand mix this for a little bit until yousee no more egg yolk as a full it’s allmixed and incorporated togetherokay so now we have all of our eggthat’s mixing with our buttermilk I canno longer see the egg yolk and thebuttermilk one from a white two kind ofbabe really really liked yellow colorand that’s what you want so now the nextthing that we’re going to add to thismixture is butter so you want 1/4 cup ofmelted butter so I already went aheadand melt it all of my butter so it’sready to go but you do want to melt ityou don’t want it in clumps or insquares or cubes because it won’t mixand with this mixture if it’s not meltedso go ahead and melt your butter asksomeone to help you put it in themicrowave you’re going to want 1/4 cupwhen it’s solid and if it gets a littlebit less that’s okay we just want tomake sure that it’s at least 1/4 when westarted so go ahead and put this intoyour mixture just like that and thenagain we’re gonna mix for a little bityou can go ahead and turn it on tonumber 2 to mix and just mix for about30 seconds okay there we gothis is all nice and mixed and now thenext thing that we’re going to do is weare going to add our dry ingredients toour wet ingredientsso grab your wet ingredients and justlike we did with our cupcake batterwe’re gonna put this in in two differentportions because for those two reasonsone it helps incorporate it a littlebetter than just putting on once andthen two we don’t want to do a mess youcan simply put all of our dryingredients in at one timeit’s gonna come flying out once you turnon your mixer so go ahead and add inyour first portion just like that we’llput this back then your stands for justget your hand mixer or your whisk andthen go ahead and turn this on to numbertwo and mix it for about 30 seconds andthen we’ll add in ournext portion of dry ingredients okay sonow it’s all nice and mixed we got readyto go let’s go ahead and add in the nextportion I’m just gonna leave it in thestand mixer this time all right now whenyou put it in there I want to make surethat you really watch it because wedon’t want to over mix because thatwould not be any good for our bread oncewe put it in the oven so when you’relooking at it you want it so it’s justincorporated don’t want to see any bigclumps you don’t want to start seeing itcreate a bowl you just want it to be soyou can’t see any of the flour anymoreyou are gonna see some flour on the sideof your bowl just leave it we’re gonnascrape that off in a second so let’s goahead and mix you’re only really gonnaneed like 20 seconds of mixing on numbertwo and then it should be good to go onwe’ll just hand mix the rest okay so nowit’s all good you’ll see it will look alittle chunky but that’s good it getsbread dough batter doesn’t look likecupcake batter it’s not nice and liquidyit’s a little more chunky[Music]okay so now that we have this we’regonna first just kind of fold and mixall of the sides of your dough mixtureto get any flour that might be left overon the side and this is what you want itto look like okay it’s not liquidy it’skind of dull looking you might look alittle bit like play-doh and that’s whatyou want your bread dough to look likeso now that we have this already we’regonna start adding in the last threeingredients which is our cheddar orchive and our zucchini because that’sthe kind of bread that were making sothe first thing we’re gonna add in isour cheddar cheese and we’re going toneed 1/4 cup of cheddar cheese and thenwhat you’re gonna want to do is grabyour one cup and now might have a littlebit of liquid in it so I’m gonna quicklygo rinse this out so that I can use itfor cheese the right back okay so now Ihave my nice clean 1 cup so again is theone that has the number one and then cupabsolutely help if you need help andwe’re gonna go ahead and fill this upwith our cheddar cheese all right therewe go snogging on my one cup we’re justgonna pour that in and then you needyour 1/4 cup so that one has a one aslash and a four and then it says cup sothat’s what you’re going to need goahead and fill that one up with cheesethere we gopour that in there remember if you makea mess it’s ok we’ll clean it up as wegoso once you have all the cheese in yourbowl we’re gonna just use a spatularemember this spatula looks like usuallyas a plastic or a wood stick at thebottom and then the rubber part at thetop that helps scrape and we’re justgonna fold this in which means you startat the side go down and under and thenpull it all up and then keep doing thatuntil all the cheddar cheese is nice andcombined with our bread dough okay sonow it’s all nice and mixed nuts bindlet’s go ahead and clean up our cottagespace a little bit so grab your kitchentowel and just move any mess you mighthave made there we gonow the next thing that we’re gonna addin here is our zucchini so for zucchinithis is what a zucchini looks like andwe’re going to need 1 cup of shreddedzucchini now right now it isn’t veryshredded so this part you’re definitelygonna need an adult to help you with sogo ahead and you’re gonna grab thesethree so first thing that you’re goingto need is a cutting board and you sizecutting board look dude you’re alsogoing to need a knife for this and thena grater so I’ve had a bit greatersometimes you can buy graders they’re alittle smaller but frayed this one youare going to need a pretty big graterand it kind of just looks like this thisone has a lot of different options onhere because we’re going to shred itdown so ask someone to help you do thisbecause I don’t want you to get hurt orcut because one on Mike is really sureand then to a grater is really reallysharp as well so I ask an adult to dothis part for you so then you can addthose try to zucchini in once it’s allcut up so what you’re going to need todo is just cut off one end of thezucchini and that’s the side that we’regoing to use on our graterthere’s no greater you start at the topyou go down and you just keep going upand down and pushing it towards thegreater you know crate shredded zucchinilet’s go ahead and grate this up allright let’s see how much you have madeso like I said we need one cup so I’mgonna grab my one cup so I’m in there tosee if I need to make any more shreddedzucchini looks like I need some more sowe’re gonna grate some more all rightlet’s see if that was enough perfectso now I have my whole cup filled we’regonna go ahead and add that to ourmixture and then we’re gonna do the samething that we did with the cheese we’rejust gonna scrape on the side go downand pull up and then just fold it overthere we go final ingredient which isthe chives so here are my chives theykind of look like long grass sticks wewant fresh chives if you have it if youdon’t you can always use dried chivesthe fresh works a little bit better andagain if you’re doing fresh chives makesure you have someone helping youbecause you are gonna need to use aknife to cut it up into smaller piecesand you’re gonna need two tablespoons soif you’re using dried chives that justcome in a spice jar measure out twotablespoons if not we’re gonna use ourfresh chives we’re going to take a bunchand we’re gonna start cutting them upinto small pieces againhave someone help you do this because Idon’t want you to get in your whileusing a knife so you’re just gonna makesmall little slices so if they look likea sprinkle sighs all right so let’s grabmy tablespoon so I can measure to seehow much I have all right a little bitmore okay so now I have my firsttablespoon pour that in there and thendo one more tablespoon okay so now Ihave my second tablespoon pour that inthere and then you can go ahead and moveeverything out of your way grab yourbowl last time start on the side scrapego to the bottom and fold over okay sonow we have everything combined and allcome close right in show you what itlooks like here is my batter it’s allcombined you can see all those prettycolors in there with the green and theorange and now we’re going to add thisto you and then you’re gonna dump yourbread dough straight into the panuse your spatula to scrape it down whenyou scrape whatever is kind of left overdon’t miss out on any yummy missed nowthat it’s in your pant go ahead andspread it out so it’s an even layer andthat it covers every part of your handthis helps your bread dough supportbecause it’s all the same height andthickness because of what part was alittle thicker than the other it wouldtake that a longer time okay now it’sall in there ready to go and now you’regonna put this into your preheated ovenfor one hour and then when it’s all doneyou’re gonna pull it out and just likewe use this trick in our cupcakes you’regonna take a toothpick put it downstraight in the center of your breaddough and when you pull it out thereshouldn’t be any dough batter on thestick at all if it is it means it’s notcooked go ahead and put it back in foranother five minutesand then pull it out and try again butif it comes out clean and there’snothing then it’s ready to goso let’s go ahead and put it in the ovenfor one hour and we’ll check it whenit’s all donewelcome back so the bread is finallyfully cooked and I took it out of theoven and I let it cool for a little bitand I’m gonna go ahead and take it outof the pan and just put it onto my plateso when we put the parchment paper intoour pan I said always make sure that youhave left over all the edge because ofthis reason right now so to get yourbread out of your pan or goto do is just grab both sides of aparchment lift straight up and put itdown on your dick just like that makes asuper simple this way nothing stuck tothe pan so nice and clean once you’vegotten it out of your pan you can goahead and take your parchment paper andpull it off the sides and now to getyour bread off of the bread from paperall you have to do is kind of pick it upflip it overgrab your bed and there you go it’s allready go just like yeah it looksdelicious it smells even better and thenyou just let it fully cool and then youcan cut it up into slices you can putbutter on it if you want you can justleave a plane and eat it just with theyummy goodness that’s in the breaditself so I hope you enjoy creating yourvery own not yeast bread with me todayand just like I said in the beginningthis is gonna be a whole new serieswhere we bake lots of really yummygoodness every single Friday in theafternoon at 2:30 so come
