For Tanghzhong
Flour – 30 gm
Milk – 37 gm
Water – 70 gm
For dough
Flour – 459 gm
Yeast – 12 gm
Sugar – 30 gm
Water – 180 gm
Milk – 50 gm
Butter – 30 gm
Salt – 15 gm
~First Proofing – 1 hour
~Final Proofing – 40 minutes
~ Bake at 190°C for 12-15 minutes
