Recipe:

Ingredients For Potato Curry (आलू की सब्ज़ी):

* 2 or 3 potatoes, boiled, peeled and coarsely mashed or chopped (२ या ३ उबले, छिले और मोटे तौर पर तोड़े हुए आलू),
* 2 tbsp cooking oil or ghee (२ बड़े चम्मच पकाने का तेल या घी),
* 1 tsp cumin seeds (१ छोटा चम्मच जीरा),
* 1/2 tsp ground black pepper, or to taste (१/२ छोटी चम्मच पिसी काली मिर्च),
* 1/2 tsp turmeric powder (१/२ छोटी चम्मच हल्दी),
* 2 tsp coriander powder (२ छोटे चम्मच धनिया पाउडर),
* 1/2 tsp or to taste Sendha Namak (Fast-friendly salt) (१/२ छोटा चम्मच सेंधा नमक),
* 1/2 of a fresh green chili, chopped (कटी हुई १/२ ताज़ी हरी मिर्च),
* 2 tbsp plain yogurt (curd) (२ बड़े चम्मच दही),
* 1 tbsp chopped fresh green coriander or cilantro (कटा हुआ ताज़ा हरा धनिया),
* 1/2 cup water, or as required (१/२ कप या ज़्यादा पानी डालें).

Ingredients for Kutu Ki Roti (buckwheat flour flat bread) (कूटू की रोटी):

* 3 tbsp kutu ka ata (buckwheat flour) + more for dusting (३ बड़े चम्मच + ज़्यादा कूटू का आटा),
* 2 or 3 tbsp boiled, or as required of peeled and mashed potatoes (२ या ३ बड़े चम्मच + या ज़्यादा उबले, छिले और मैश किये आलू),
* 1 tbsp chopped fresh cilantro or green coriander (कटा हुआ ताज़ा हरा धनिया)
* 1/2 tsp or to taste of Sendha Namak (fast-friendly salt) (१/२ चम्मच या स्वादानुसार सेंधा नमक),
* Cooking oil or ghee, as required (तेल या घी),
* Homemade unsalted butter for serving (मक्खन).

Method:

1. Put a pan over medium heat with 2 tbsp cooking oil or ghee in it. Add 1 tsp cumin seeds, reduce heat to low and add in 1/2 tsp ground black pepper, 1/2 tsp turmeric powder, 2 tsp coriander powder, 1/2 tsp or to taste of Sendha Namak, that is fasting-friendly salt. Stir and saute for half a minute.
2. Add in chopped half of a fresh green chili, and 2 tbsp yogurt or curd. Increase the heat to medium-high; stir and cook for a couple of minutes.
3. After cooking for 2 minutes, add 2 or 3 boiled peeled and coarsely mashed and crumbled potatoes into the pan. Stir to mix while breaking larger potato pieces using a spoon.
4. Now pour 1/2 cup or more of water into the pan. Boil for 2 or 3 minutes while stirring occasionally. Sprinkle with chopped fresh green coriander or cilantro, stir and cover the pan with its lid. Remove from heat.
5. Put a tawa or griddle over medium heat.
6. In the meanwhile when tawa is heating, prepare the dough. Always make buckwheat dough just before cooking time. Add 3 tbsp kutu ata or buckwheat flour in your kneading vessel. Add in 2 or 3 tbsp of boiled peeled and mashed potatoes, chopped fresh green coriander or cilantro, 1/2 tsp or to taste of Sendha salt and 1 tsp cooking oil or ghee. Clean your hands to mix and knead the dough. Add in more mashed potatoes, if required. Do not add water at all. Knead just until smooth dough is formed, do not over-knead.
7. Take a small portion of dough in your hands and roll into a ball or patty. Dredge dough ball in buckwheat flour so as to coat evenly with flour on all sides. Place flour coated patty on a rolling base and use your rolling pin to roll into 1/4 inch thick round dough sheet; that is roti.
8. Generously grease the heated tawa with cooking oil or ghee, and place rolled roti on it. Cook for a minute or until roti is slightly firm. Flip onto other side using a flat spatula. After cooking this side too for a minute, flip again onto previous side, and generously apply cooking oil or ghee on the top surface to grease it. Flip again so as to turn the greased side down then grease this side surface too with cooking oil or ghee. Greasing liberally is a must to prevent roti from getting dried and hard. Cook for 2 to 3 minutes while flipping and pressing the roti with flat spatula frequently or until well browned.
9. Repeat the process to make more rotis from remaining dough, and serve warm with a dollop of butter on top of roti along with prepared potato curry, accompanied with green chutney and curd if like to. Enjoy.
