5.5% natural leaven
15% rye flour
9% water
—— Main Dough ——
70% strong flour
15% rye flour
2% salt
7% sugar
37% liquid egg
37% fresh cream
—— Glaze ——
37% minced onion
2.5% sesame oil
1% salt
3.7% sesame

—————— Instructions ——————
1. Stir the materials needed for the dough starter evenly and ferment to 3 times the room temperature;
2. All materials are mixed uniformly and autolyse at room temperature for 1 hour;
3. Fold and knead to form a smooth ball, and ferment to 3 times the size at room temperature;
4. Divide, 130 grams each, round and relax at room temperature for 1 hour;
5. Squeeze the dough with the smooth side facing down and evenly dip the filling;
6, the second fermentation to press the dough, can not collapse or rebound;
7. Preheat the oven at 190 ° C and bake for 20 minutes.

The total moisture content of this bread is close to 100%. If you are making bread with high moisture content for the first time, you can reduce the total liquid content to 70% to avoid failure.

5、压扁面团,光面朝下,均匀沾上馅料;
6、二次发酵至按压面团,不塌陷不回弹即可;
7、预热烤箱190℃,烘焙20分钟。
