THE GOLDEN BALANCE CHICKEN AND WAFFLES

My twist on Chicken and Waffles

Ingredients:

Chicken:
2lbs chicken tenders
2 cups ap flour
1.5 cups cornstarch
1 tablespoon salt
2 tablespoons cajun
0.5 cups water
Your preferred sauce: buffalo, barbeque, thai chili, lemon pepper, etc

Waffles:
2 cups ap flour
1.75 cups milk
0.5 cups vegetable oil
2 eggs
1.5 tablespoons sugar
4 teaspoons baking powder
Pinch of salt

Directions:

Chicken:
Mix the flour, cornstarch, salt, and cajun and divide into two seperate bowls
To one bowl add the water to achieve a runny consistency
Cut chicken into small bite sized pieces and drop into wet batter
Shake off excess, toss in dry batter, then place in 350 degree oil
Fry for 3-5 minutes or until the chicken is golden brown
Take chicken out and toss into your choice of sauce (it’s also very delicious as is) then place on your waffle and drizzle ranch

Waffles:
Whisk the eggs, milk, and oil until homogenous
Sift in your dry ingredients and mix until smooth (do not over mix)
Pour batter into your waffle maker and remove when golden brown
