Nick of Thyme – Savory Belgian Waffles & Potato Latkes with Thanksgiving Leftovers



We had TONS of leftovers from Thanksgiving, so we thought we’d come up with an interesting way to use them for breakfast the next day. The Belgian waffles were super easy and SO good – we will definitely be doing this every time we make turkey and dressing.

To make the waffles, just dice some turkey and dressing (you’ll need small pieces – about 3-4 cups). Beat 2-3 eggs (depending on size) and mix that in. Add about 2/3-1 cup shredded cheese (more if you want it cheesier). A little salt and pepper and mix it all up. It should be tacky wet but not super wet. If it’s too runny, add in some more dressing.

We sprayed the waffle maker with olive oil, but I don’t think that’s necessary. We also baked some bacon and added some bacon pieces in. You can really throw in anything that sounds good, in our opinion!

For the potato latkes, form cold mashed potatoes into “pancakes” and fry in some oil in a hot pan. Our mashed potatoes tend to have a lot of fat in them (like butter and heavy cream), so they sometimes start falling apart while frying them. This time, they worked much better – but if you have super smooth mashed potatoes, it might help to add some hash browns or something (which we haven’t tried yet!).

We had extra waffles, and they kept for several days – and reheated well in the microwave. I’m sure they’d probably be fine to freeze, too. Enjoy!
