Waffles made from soaked beans are so delicious and perfect for breakfast.
Glutenfree,Healthy, made from simple ingredients from the pantry they are delicious and so simple to put together.
Make pancakes with the same batter in case you don’t have a waffle maker.
A family favorite !!

Moong Beans Waffles

Makes 8 pieces (5 ” waffle )
Preparation time 20 minutes (more for soaking and sprouting)
Cooking time 30-40 minutes

Ingredients
3 cups whole moong beans (soaked and sprouted) (see notes)
4-5 cloves of garlic
1 large red chili (jalapeños for the color) or 2 green chillis
2 tablespoons chickpea flour
1 teaspoon jaggery
Salt to taste
1 cup +2 tablespoon water
1 teaspoon baking powder
2 teaspoon canola oil for greasing

Method
Wash and soak the moong beans overnight inadequate water. Drain and sprout for a day. (see notes)
In a food processor add the sprouted moong beans along with garlic, jaggery, salt, chili, chickpea flour and ½ cup of water. Process for 3-4 minutes until everything is coarsely blended. Don’t be tempted to add more water
Pour the thick batter in a bowl and add baking powder and mix well. Add the remaining water and mix again.
Warm the waffle iron and apply oil generously on both sides.
Pour ¼ cup batter in the center. Cover and cook.
These waffles may take 5 – 7 minutes as per your iron. (see notes)
Serve warm with coriander mint chutney and steamed salted buttered peas on the side.

Top tips
Soaking the moong beans is important though sprouting is not. I use the sprouted moong beans for Extra nutrition.
1 cup of moong beans yields 2.5 cups of soaked moong beans and 3 cups of sprouted beans.
Do not open the waffle iron before they are cooked or they may fall apart.

Jalapeño chillis are bright red with less spice which is why I used it in the recipe. You could use green chilies or dried red chilies as per taste and availability.
Jaggery besides the sweetness also imparts lovely golden crust to the waffles. Don’t skip it if not necessary.
Garlic is a personnel choice skip it if you don’t prefer.
In case you do not have waffle iron proceed in the same way to make a pancake of 4”diameter.
Generously use butter if not using oil
