Pandan is the vanilla extract of Southeast Asia and it is what gives these Vietnamese waffles their iconic green color and wonderful aroma.
In Vietnam, fresh pandan leaves are used instead of pandan flavoring. You cut the pandan leaves into smaller pieces, blend them with a bit of water then strained.
