Who says you can’t be vegan and eat chicken and waffles? You sure can. In this recipes I use oyster mushrooms to make a delicious vegan fried chicken. I am telling you this is the best vegan fried chicken substitute so many people I made this for say they like it better than actual chicken. This meat is juicy, tender and crispy like it should be.

Waffles: for the wet add 1 cup non dairy milk ( I used unsweetened almond milk) 1 TBS apple cider vinegar and 1 tsp vanilla extract mix and set aside. For the dry add 1 cup white flour to bowl, 1/2 cup spelt flour, 1 TBS cornstarch, 1 tsp baking powder, 1/4 tsp baking soda, 1-2 TBS coconut sugar, 1/4 tsp cinnamon , pinch of salt. You might need to add a little bit of more milk if too thick. Mix wet into dry and pour into waffle maker.
For the vegan “chicken” Take a package of oyster mushrooms. The flat looking kind. For the dy mixture add 1 cup white flour , 1 TBS cornstarch, 2 tsp seasoned salt, 1/2 tsp smoked paprika, 1/2 tsp pepper, 1/8 tsp cayenne pepper, and 1 tsp italian seasoning.
For the wet add 1 cup non dairy milk, 1 tsp hot sauce, 1 tsp dijon mustard, 1/2 TBS apple cider vinegar, and 2 TBS nutritional yeast. Dip mushrooms 1 by 1 into wet mixture then dry back into wet then dry again. Fry in deep fryer for about 2-3 mins. If using a pan to fry. Fry it for about 2-3 mins on each side or until golden brown.
Put fried oyster mushrooms on top of waffles and top with syrup and hot sauce! Enjoy 🙂
