Recipe:

Ingredients-

For the Chicken
– 2 quarts buttermilk
– 2 tbsp. salt
– 4 lbs. bone-in chicken thighs and drumsticks
– Vegetable oil
– 2 cups all-purpose flour
– 2 cups crushed flamin’ hot Lay’s potato chips
– 2 tbsp. paprika
– 1 teaspoon cayenne
– Salt
– Ground pepper
– 4 large eggs

For the Waffles
– 1/2 cup crushed Lay’s original potato chips
– 1 1/2 cups all-purpose flour
– 2 tbsp. sugar
– 1 tsp. baking powder
– 1/2 tsp. baking soda
– 1 oz. sour cream
– 1 cup milk
– 6 tbsp. butter, melted
– 3 eggs, separated

Instructions:
1) Brine chicken for 2 hours to overnight in large bowl with buttermilk and salt. Cover with shrink wrap.
2) Make waffles. Stir together dry ingredients.
3) Whisk together milk, melted butter, sour cream, and egg yolks.
4) Add wet and dry ingredients together.
5) Crush chips and add to waffle batter.
6) Cook on waffle iron and store in oven at 200 degrees.
7) Take chicken out of brine and pat dry with clean towel.
8) Stir together dry ingredients including crushed chips. Whisk eggs and set aside in bowl.
9) Heat oil in deep pan to 350 degrees.
10) Dip chicken in egg. Dip in flour mixture. Fry in oil until internal temperature reads 165.
11) Take chicken out of oil and let dip dry on rack.
12) Enjoy!
