2 C Flour3 Tsp Baking Powder1 Tsp Salt2 Tbsp Sugar2 Eggs, separated1 1/2 C Milk (or milk alternative)1 Tsp Vanilla6 Tbsp Olive oilWhisk flour, baking powder, salt, and sugar. Set aside. Separate eggs, in separate bowls, beat egg whites until stiff but not dry and beat egg yolks. To flour mixture, add milk (or milk alternative), beaten egg yolks, vanilla, and oil. Fold in egg yolks. Grease hot waffle iron and pour batter. Cook until done, about 4-5 minutes. Serve with heated syrup, or other favorite toppings. If you’re feeling festive, you can also add a teaspoon of cinnamon to the dry ingredients.
