How to make vegetable waffles with spelled flour and yeast water from scratch – easy recipe

You asked for vegetable waffles and a recipe with spelled flour. With pleasure, today I’ll show you both in one. And I can tell you that they are really delicious and can be varied again and again.

200 g spelled flour
2 carrots (with skin, grated)
1 zucchini (with skin, grated)
1 teaspoon paprika powder sweet
50 ml yeast water
1 egg
1-2 teaspoons of salt
1/2 teaspoon pepper
80 g yogurt or grainy cream cheese
120 ml milk
3 tablespoons vegetable oil (neutral)

Yoghurt, quark, grainy cream cheese as a dip as desired

Put the flour in a large bowl and now add all the other ingredients. Mix everything into a homogeneous dough.
Now leave everything covered at room temperature for up to 8 hours. However, this is not absolutely necessary as the natural yeast will not rise in any case.
Now grease your waffle pan with a little fat and pour a ladle of the waffle batter into it. Once the waffle is golden brown, it is ready to be consumed. You can still coat them with a dip. Yoghurt, quark or grainy cream cheese are suitable for this. This can be seasoned as desired and, for example, spiced up with small pieces of paprika.
