The key to making a great gluten-free, dairy-free waffle is all in the proportions: Use equal amounts of a starch, like arrowroot starch, and a nut flour, like almond flour. Doing so will create a waffle that is both light and fluffy on the inside and crispy on the outside.

Recipe for Making Gluten-Free, Dairy-Free Waffles
1.5 cups soy milk (or almond milk)
3 TB oil
¼ cup sorghum flour
½ cup almond flour
¼ cup rice flour
½ cup arrowroot powder
2 TB baking powder (aluminum free for GF)
3 TB organic dark brown sugar
¾ tsp xanthan gum
¼ tsp salt (optional)
