How to Make Gluten-Free Dairy-Free Waffles (Episode 30)

This recipe has been six years in the making and we’re finally ready to share it with you. If you’re at the mercy of allergies, you don’t have to resort to pre-made, frozen gluten-free waffles. The key to making a great gluten-free, dairy-free waffle is all in the proportions: Use equal amounts of a starch, like arrowroot starch, and a nut flour, like almond flour. Doing so will create a waffle that is both light and fluffy on the inside and crispy on the outside.

Recipe for Making Gluten-Free, Dairy-Free Waffles
3 eggs
1.5 cups soy milk (or almond milk)
3 TB oil
¼ cup sorghum flour
½ cup almond flour
¼ cup rice flour
½ cup arrowroot powder
2 TB baking powder (aluminum free for GF)
3 TB organic dark brown sugar
¾ tsp xanthan gum
¼ tsp salt (optional)
