How to Make Chicken & Waffles from Scratch | Back to Basics

In today’s Back to Basics class, Chef Zach from Helmsman Ale House is teaching YOU how to make Chicken & Waffles at home.

Here below are the ingredients you need:

Chicken & Waffles (for 4)

For waffles
4 eggs, separated
2.5 cups buttermilk
¾ cups melted butter
.1tsp vanilla paste, or extract
2.5 cups ap flour
1 teaspoon baking powder
1 teaspoon salt
½ cup brown sugar

Chicken Marinade
4 6oz chicken breast
3 cups buttermilk
4 fl oz tabasco or similar hot sauce
1 tbsp salt
1 tbsp black pepper

Seasoned Flour
3 cups flour
¼ cup paprika
1 tbsp cayenne pepper
1 tbsp black pepper
1 tbsp salt

Black Pepper Porter Maple
1 cup porter or stout
1 cup maple syrup
1 cup brown sugar
1 tbsp black pepper

today we’re gonna be making chicken andwaffles from scratch with fluffybuttermilk waffles pan-fried chicken andspicy style maple syrup mixing togetherwe have a little bit of AP flour aboutthree naps baking powder butter milk andvanilla about a cup of sugar here andwe’re gonna put half of it in all we’regonna do is we’re gonna mix thistogether until a thick batter forms soas you can see I have my six eggs hereon the side as you can see I’ve beenwhipping and what I want is when we knowwe’ve kind of achieved the right areaswhen I’m able to take the whisk and itstill holds its form funnily enough aswe give with our wipes we’re gonna dothe same thing to our yolks so we’regonna add in the yolk themselves kind ofjust fold them in lightly you want tomake sure you’re taking it from thebottom just working it over the top andI just dropped in a little bit of brownbutter and vegetable oil to the end alittle bit of pan spray and you’re gonnawant to drop in just enough there tokind of poke out to this side give it aclose we’re gonna set the timer forabout three minutes so what we like todo is take our six ounce chicken breastswe’ve had it marinated in a little bitof buttermilkTabasco buttermilk and Tabasco as welland then while that kind of sits in thebuttermilk what we’re gonna do is we’regonna make the dredge we have a littlebit of black pepper paprika cayennepepper we’re gonna kind of mix thistogether with our hands you want to makesure you’re getting some salt in therefor the chicken what we like to do is adouble batter cover that up with flourand back into the buttermilk cover itback up again and back into the flourthis makes like a nice craggily I’llgive us a lot of texture when fried asyou can see a nice kind of golden brownnice and crunchy and it’s nice and lightas well it doesn’t feel dense whenyou’re holding it what we’re looking todo here is just get a nice crust goingin our fire pan pie and we’ll befinishing in it just gonna slowly lowerit in or take it drain it off a littlebit and finish it in the oven so we’vepreheated our oven to about 300 degreesfor about seven minutes until it’s justcooked all the way through and it’s nicewe start out by making a syrup we’regonna let this brown sugar kind of meltand slowly turn into almost like thebeginnings of a caramel so as you cansee it’s certainly cooked get a littlebit thicker you can see the bubbles getbigger we’re gonna be losing a littlebit of the water content of the beer andit’s gonna slowly be turning into asyrup so we’re just gonna kind of spoonthis over the whole thing that blackpepper stout maple syrup and that’ll beready to go real simple fluffy waffle onthe bottom piece of fried chicken sweetsavory syrup what’s not to like pairwith your favorite hot sauce eat it athome have fun[Music]
