Delicious savory waffles prepared with freshly grated potatoes . Crispy on the outside and fluffy on the inside they not only taste amazing, but they are a super fun meal to serve to your family.
For this recipe its best to use freshly grated potatoes. The starch from the potatoes helps to hold the potatoes together as they cook and they don’t fall apart. The heat from both sides of the waffle maker cook the “waffles” quickly and get a nice crunch on both sides.
Makes 2 square waffles
2 medium sized peeled potatoes
1 small onion
1/4 tsp baking soda
1/2 tsp pepper
2 tbsp all purpose flour
Take peeled potatoes. Grate them using fine grater attachment. The potato will be grated in to fine noodles. Put the grated potatoes in to water for the extra starch to be absorbed. Drain water from the potatoesGrate a small onion, it adds flavor to the waffle and doesn’t let them oxidize. Add grated onion, salt, pepper and baking soda. Add one egg and flour to the potatoes. Mix well until combined, spoon out excess liquid. Generously grease both sides of the waffle iron with oil and preheat.
Scoop out the potato mixture and spread well on the waffle maker. Cook for 8-10 minutes. Cook until golden brown on both sides. Serve the potato waffles hot with egg, chicken, cheese, butter or guacamole. Delicious savory waffles prepared with freshly grated potatoes.
