Learn how to make waffles from scratch using pumpkin.
1 1/4 Cups Whole Wheat Pastry Flour (150g)
1/2 Teaspoon Baking Powder (2.5g)
1/4 Teaspoon Baking Soda (1.25g)
1 Teaspoon Cinnamon (1.4g)
1/2 Teaspoon Nutmeg (1g)
1/4 Teaspoon Ground Cloves (0.5g)
1 Cup Pumpkin Puree (246g)
3/4 Cup Milk or Milk Substitute (180ml)
2 Tablespoons Honey or Maple Syrup (30ml)
1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.
2. In another bowl, whisk together the pumpkin, milk, and honey, stirring together until well combined. Pour this mixture into the dry ingredients, and stir just until smooth and well combined.
3. Heat a waffle iron and coat with cooking spray or butter. Spoon the batter into each waffle mold. Close and cook for about 2 to 3 minutes or until the waffles are cooked through and are golden brown. (The cooking time will also depend on each waffle iron. Serve warm.
