Easy Keto Chicken & Waffles

How to make Easy Keto Chicken and Waffles

Suggestions for chicken marinade:
2 boneless skinless chicken thighs
3 tbs olive oil
1/4 tsp smoked paprika, back pepper, sea salt, garlic powder, onion powder, dried parsley (add more or less to your taste)

Chicken Coating:
1/2 cup pork rind crumbs
1/4 cup almond flour
3 tbs grated parmesan cheese

Waffles: Use brand shown in video or any waffle recipe of your choice. I divided the recommended measurements on back of waffle mix by 1/3 for 2 waffles. I like to add a pinch of cinnamon, nutmeg, and a little splash of vanilla extract.

Directions: Season chicken and cut into strips. I like to marinate mine over night but it’s not necessary. Combine ingredients for coating in bowl. Dip each piece of chicken one at a time into coating being sure to cover well on both sides. (tip: I like to use one hand for the wet chicken and one hand for the dry coating. It makes the process a bit less messy). Heat cooking oil on medium high heat in a shallow frying pan. Once oil is hot add coated chicken. Cook for 4 minutes on each side until golden brown. Flip chicken one more time for about 2 min. Prepare waffles (be sure to use cooking spray on waffle iron!). Plate meal! I like to garnish with sugar free syrup, bacon, scallions, and dried parsley. 🙂

**you could also bake or air fry the chicken 🙂

[Music]hey y’all and welcome to Seoul somefoodie today I am super excited to sharewith you this easy low-carb chicken andwaffles I love a good recipe that I canget done quickly without having tocompromise flavor or quality what if Itold you you can have this meal on yourtable in less than 30 minutes don’tbelieve me just watch for their chickenbreading I am going to use this almondflour here also I’m going to be usingsome grated Parmesan cheese make surethat is freshand lastly I’m gonna be using these porkrind crumbs now if you don’t have themin a container like this you can alwaysbuy a bag of them and crush them downyourselves but you don’t need a lotsuper low carb and makes a really goodcoating for the chicken Here I am justmixing those three ingredients togetherI’m gonna get all of the clumps outmaking sure everything is nice and fineand smooth mixing everything together toget that writing just right here I havesome boneless skinless chicken thighsthat I have marinated and I have customdown in two stripsand so most recipes for chicken likethis will call for having like an eggdip before you dip it into the coatingbut I decided to skip that stepI find that well marinated chicken isall you need the egg dip kind of makesthings messy and just more complicatedthan it needs to be so just take yourmarinated chicken dip it right into thecoating make sure it’s coated reallywell you see me pressing it downflipping it on both sides just to makesure you get everything well covered I’mgoing to go ahead with the rest of thesestrips and make sure everything iscoated very nicely all right all donewith that now I’m gonna take a reallyshallow pan and place just enough oil tocover the tenders halfway so you don’twant too much oil where the tenders aregonna be totally submerged in it justenough to cover them halfway and bringit up to temperature nice and hot thenI’m gonna go ahead and add all of thetendersfor a few minutes before I flip it over[Music]here’s how the chicken is looking aftera few minutes and I’m gonna go ahead andflip it over you see that the first sidehas gotten a really nice golden colorlooks really really good I’m gonna goahead and flip all of these and let itdo its thing for a few more minutes[Music]here’s a close-up of how great the firstside is looking yours should looksomething like this oh yeah don’t forgetto subscribe if you like what you see sofar so here’s how it’s looking I’m gonnagive this one more flip actually andthen I’m gonna take it out and when youtake out your chicken just make sureyou’re putting it on a cloth that cansoak up the extra oil I like to use apaper towel that works perfectlythese don’t absorb a ton of oil but youwant to take out as much oil as you canso after I take these off I’m gonna goahead and put them on top of a papertowel on top of a plate[Music]now that the chicken is all done let’stalk about these waffles so here is thebrand that I’d like to use for low carbwaffles it’s really good and I justdoctor it up with a few extraingredients so I use cinnamon nutmeg itcalls for a little bit of olive oil oneeggthis is light cream and then I also liketo put in a little vanilla extract andhere is my mini waffle iron as you cansee it’s the size of the palm of my handit works really great it makes greatwaffles and just want to share with youall what I use so to make the wafflesyou’re gonna go ahead and add all of thewet ingredients first mix that up andthen I’m gonna add the waffle mixtureyou can use any waffle make sure thatyou like by the way if you have a recipefor waffles anything will be just fineI’m just gonna show you what I do I’mgonna add my spices next mix that up andgo ahead and put it on the waffle makerI’m making two waffles so here I am justadding the spices into this final mix ofthe waffle batter and you can see herewhat kind of texture we’re aiming forhopefully you can get a good look atthat with this waffle iron you just wantto make sure that you go ahead and sprayeach sidewith some cooking spray before you getyour waffle started that way it willhelp them to come out really easily whenthey’re done as you can see it makes areally great golden-brown waffle supersoft and fluffy and so deliciousall right yeah so here we are at myfavorite part the grand finale we aregoing to plate this delicious meal so Ihave my two waffles there at the base ofthe plate and now I’m just gonna stackon some of these coated chicken tendersthey are so juicy and so delicious y’allI’m gonna go ahead and also put on someair fried bacon that I prepared as wellas some chopped up scallions and parsleyjust giving you all somewhat of a 360right here to see that I also like touse this syrup that is also zero carbthis is the one I love to use asugar-free made with some greatingredients I’m gonna go ahead and put alittle bit of that on topy’all doesn’t this look so good and yesit was done in under 30 minutes Here Iam showing you how juicy and deliciousthese tenders are so so good that wasabout maybe seven minutes for thewaffles maybe 15 minutes for the chickena little bit of plating under 30 minuteshere we are as always please
