**BUT!!!!** I DOUBLED the amount of chickpea flour and plant-based milk ONLY in the recipe. If you double EVERYTHING your waffles will have a little TOO much flavour! These are best if they are a “thin” batter so add milk or water accordingly.

Mushroom Curry

Roughly 700 grams white button mushrooms
1 large diced white onion
2 large tomatoes (blitzed in a blender) OR 1 small can of tomato paste
1 can full fat coconut milk
1 tbsp minced garlic
1 tbsp curry powder
½ tbsp minced ginger
2 tsp tandoori masala
1 tsp kala namak (black salt)
½ tsp ground coriander
¼ tsp ground cardamom
Pinch of black pepper
3 coriander pods (optional)
Bit of coconut oil for frying

1. Prepare the mushrooms by wiping off dirt and chopping into pieces. Dice the onion and blitz the tomatoes in a Magic Bullet or blender.
2. Heat the coconut oil in a large skillet. Once hot, add the coriander pods, minced garlic and ginger and spices. Stir constantly (to avoid burning) for about 30 seconds.
3. Add the diced onion and saute about 5-6 minutes (until translucent.)
4. Add the tomatoes and mushrooms and cook for about 8 minutes (until the mushrooms have reduced.)
5.Reduce to a simmer & add the coconut milk (do NOT boil the coconut milk!!) Cover and let simmer for at LEAST 20 minutes.
6. To serve, pour a generous amount of mushroom curry over your chickpea flour waffles and garnish with fresh cilantro or minced chives (OR BOTH!!) ENJOY!!!
