Strawberry and Cinnamon Waffles:
– 2 1/4 Cups All Purpose Flour
– 1 Tablespoon Baking Powder
– 3 Tablespoons Sugar
– 1/2 Teaspoon Salt
– 1 Teaspoon Cinnamon
– 1 Teaspoon nutmeg
– 2 Large Eggs Separated
– 1/2 Cup Vegetable Oil
– 2 Cups Milk
– 1 Teaspoon Vanilla
Extract
– 1 Teaspoon Brandy Extract
Strawberry Filling
– 8 to 10 strawberries hulled and diced
– 1 tablespoon sugar
– 1 teaspoon Brandy
Add strawberries to bowl, add sugar and brandy. Mix well and set aside.
Instructions
Preheat your waffle iron, add light oil
In a bowl whisk together the flour, baking powder, sugar, salt, fresh nutmeg and cinnamon.
In another bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
In a separate bowl mix together the egg yolks, vegetable oil, milk, brandy and vanilla extract.
Add the egg yolk mixture to the dry ingredients and mix well. Next add the strawberries. (Try not to overmix or it will make waffles tough).
Fold in the egg whites gently
