리에주 와플 만들기 How To Make Liège Waffles (Belgian Waffles, Gaufres de Liège)

우미스베이킹 레시피를 참고했습니다. I referred to the recipe of Umi’s baking channel.

재료 Ingredients

강력분 strong flour 180g
중력분 medium flour 70g
우유 milk 120g
계란 egg 1개(50g)
설탕 sugar 20g
소금 salt 5g
생이스트 fresh yeast 8g
버터 butter 70g
펄슈가(우박설탕) pearl sugar 80g
팬에 바를 버터 분량외 extra butter to grease the pan

1. 버터, 펄슈가를 제외한 모든 재료를 넣고 섞은 후, 한 덩어리가 될 때까지 반죽합니다. Combine all ingredients except the butter and knead until the dough comes together.
2. 한 덩어리가 되면 버터를 넣고 약 10분간 매끈하게 반죽합니다. Once the dough comes together, incorporate the butter and knead for about 10 minutes until the dough becomes smooth and elastic.
3. 반죽이 다 되면 펄슈가를 넣고 잘 섞이도록 반죽합니다.
Once the dough is done, add the the pearl sugar to it and kneed it into the dough.
3. 실온에 약 1시간 발효합니다. Let the dough rise for about 1 hour at room temperature.
4. 90-100g씩 6개로 분할하고 둥글린 후, 버터를 바른 예열된 와플팬에 약 3분 40초 구워줍니다. Divide the dough into 6 pieces of 90-100g , roll them into balls, and cook in a preheated, greased waffle iron for about 3 minutes 40 seconds.
