~~~Recipe~~~
For the filling
1 lb Shroomeats Shred-It
2 tbsp olive oil
1/2 cup coarsely chopped white onion
1/3 cup chopped carrots
1/4 cup chopped leeks
3/4 cup chopped celery
2-3 potatoes peeled and chopped
Salt & pepper to taste

For the roux
3 tbsp olive oil
1/4 cup flour
8 oz preferred milk (less for a thicker, more for thinner)
Salt & pepper to taste
2 tbsp fresh thyme
2 tbsp fresh chopped rosemary (save a spring for the garnish!)

1. In a well-oiled skillet, cook the veggies and Shroomeats Shred-It until soft and well mixed. Add salt & pepper to taste.
2. To make the roux. Add the olive oil to a pot and slowly add the flour while mixing well. Make sure there are no clumps.
3. Add your preferred milk slowly while mixing well.
4. Season the roux with fresh thyme and rosemary.
5. Pour the roux in with the filling and mix well.
6. For the crust. We used a store-bought mix. Make as directed on the box.
7. In your desired pie container, place the crust on the top of your filling and add slits to the crust.
8. Bake at 425F degrees for 25-30 minutes or until crust is browned.
9. Serve up a slice and enjoy feeling like a kid again!
