This year I didnt get to spend Thanksgiving with my entire family. With COVID, we decided to not gather together to limit the exposure we had with others. Although uneventful, I will always remember this Thanksgiving dinner because I made the spread myself and missed my family dearly. My uncle passed from COVID on Nov 18th so my family has been broken between two states at the moment. Praying all of you had a wonderful Thanksgiving and lots of love to those who weren’t able to celebrate with family.

APPLE PIE RECIPE-
6 Granny Smith apples cored, peeled and sliced OR 4 large Granny Smith apples
1 Tablespoon lemon juice
3/4 cup sugar of choice (i used monk fruit extract)
1 Tablespoon flour (i used almond flour)
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
2 Tablespoons butter (I skipped this and the pie tasted fine!)
Sugar and cinnamon for sprinkling the top
2 premade refrigerated pie crusts
Core, peel and slice all the apples.
Then mix in all the spices and lemon juice and mix well.
Grease pan then line with pie crust
Assemble pie pan with apples
Bake at 425 degrees for 30 minutes. If the edges start browning too quickly wrap them in aluminum foil to prevent burning
