1 12 inch ring or plate
1 9 inch ring or plate
1 small baking sheet (home oven size)
1 mat ‘Silpat’ (home oven size)

APPLE FILLING
4 Red Apples
100gr Sugar
25gr Water
25gr Lemon Juice
CRUST
300gr Flour
180gr Cold Salted Butter
70gr Cold Water
2 Tbsp Brown Sugar
1 Tsp Cinnamon
INSTRUCTIONS
FILLING
Peel, core and cut the apples into slices.
Make a syrup with the lemon juice, the water and the sugar.
Once it starts boiling add the apples and cook for about 5 minutes.
Remove from the heat, strain the apples and set aside.
CRUST
Preheat the oven at 350 F
In a mixer, with the paddle, at slow speed, mix the flour and the butter until getting a “sand” texture.
You can use a food processor if you prefer that.
If you want to do it by hand you can use a fork to mix the flour and the cold butter.
Add the cold water, and mix until it comes together.
Roll out the dough immediately to a thickness of 1/10 inch.
Cut a 12 inch circle.
Sprinkle the circle with brown sugar and cinnamon.Place a 9 inch ring in the middle. Or mark a 9 inch circle with a plate.
Add the apples.
Fold the edges over the apples.
Fold the dough in your own way. Create your own design.
Sprinkle the rest of the brown sugar and the cinnamon on the apples.
Bake for about 40-50 min at 350F.
Let it cool off.
Serve warm or at room temperature.
Simple, with whipped cream or some vanilla ice cream.
