Not Your Regular Apple Pie

I have been looking forward to making this one with you. It is a cross between a Dutch Apple Pie and an Apple Strudel. It has a lovely crisp sweet crust base, a crunchy topping and a delicious strudel filling. So it’s a bit of a hybrid.

Ingredients:
For the sweetcrust pastry
100g plain flour
50g butter
30g icing sugar
1 egg
A little milk if needed

For the filling:
5 chopped eating apples
2 tbsp brandy
½ teaspoon ground cinnamon
A few raisins
A few chopped almonds
Zest of just one lemon
A sprinkling of brown sugar
A handful of fresh breadcrumbs

For the topping:
55g unsalted butter, softened
60g plain flour
75g packed brown sugar
1 tablespoon demerara sugar

Method:
Pastry
1) Preheat oven to Gas 5 / 200°C .
2) Butter the tart tin
3) Rub 50g butter and 100g plain flour together with fingers or mix with an electric whisk
4) Mix in the 30g sieved icing sugar, add the egg and mix.
5) Add a little milk if needed to draw the mixture into a ball
6) Flatten a little and chill in the fridge for ½ hour
7) Flour your board and roll out into a circle to a little larger than the flan tin
8) Transfer pastry to flan tin and push gently into the corners of the tin
9) Prick base with a fork. (This helps to stop it rising.) trim edges by rolling the rolling pin over the tin
10) Place on a baking tray and bake for 10 or 15 mins
11) Leave to cool
Filling & Topping
1) Preheat oven to gas 6/ 200’C
2) Mix all the filling ingredients together in a bowl then pop into cooled pastry case
3) Mix all the topping ingredients except for the demerara sugar together and pop on top of the filling
4) Sprinkle with the demerara sugar and bake for 30 to 35 mins or until the topping is golden brown
