This recipe begins with a simple but surprising 2 ingredient low calorie pie crust that is the perfect foundation for your pumpkin pie. The simple crust is a combination of graham crackers and unsweetened almond milk.

The first layer is a cream cheese layer to add a little extra burst of flavor. You can use an variation of cream cheese and cool whip. Add a little sugar and you have your first sweet layer.

The second layer for your pumpkin pie is your protein pumpkin layer. You start with some instant pudding mix with some milk. I recommend a dairy based milk for the fat content to bring the pudding together.
