LEMON MERINGUE PIE | HOW TO | EASY RECIPE

Nothing says “WELCOME, SUMMER” better than a good ol’ fashioned Lemon Meringue Pie. Yummmm!

RECIPE:

1 pie shell (you’re welcome to make your own if you’re fancy)
Juice & zest from 2 lemons
1 C. sugar
2 T. flour
3 T. cornstarch
½ C. water
¼ t. salt
2 T. butter
4 egg yolks
4 egg whites
6 T. sugar

DIRECTIONS:

1) Bake pie shell according to instructions on box.
2) Zest both lemons.
3) Juice both lemons.
4) Combine the lemon juice, zest, sugar, flour, cornstarch, salt, and water in a sauce pot. Bring to a boil.
5) Once boiling, add butter and stir until combined.
6) In separate bowl, whisk egg yolks until smooth (save whites in separate bowl).
7) Pour ½ C. of the hot sugar/lemon mixture into the bowl with the egg yolks. Stir until combined.
8) Pour egg yolk mixture back into sauce pot with remaining sugar/lemon mixture. Bring to a boil while continuing to stir the mixture so that it does not burn.
9) Remove from heat and pour mixture into baked pie shell.
10) In a clean mixing bowl, beat egg whites until soft peaks form.
11) Gradually beat in sugar until stiff peaks form.
12) Spread meringue on top of the pie.
13) To brown, bake the pie in the oven at 350 F for 10 minutes OR use a torch 😊
