Lemon Meringue pie – Baking with Eric

Crust=250g Bread flour. 205g Chilled cubed butter. 3g salt. 55g ice cold water.
Curd=1 1/3C (316g) water. 1C (185g)sugar. 1/3 C (38g)corn starch. pinch salt. 1/2 C (120ml) fresh lemon juice. 1 T(6g) lemon zest. 2T(28g)unsalted butter, softened. 5 large egg yolks.
Meringue: 5 large egg whites. 1/2 t cream of tarter. soft peak….1/2 C (100g)granulated sugar. pinch of salt
