Key Lime Pie – Chef Frank’s wife Sherri returns with another fantastic dessert recipe.
1-1/4 C graham cracker crumbs
1 stick butter, melted
1/4 tsp cinnamon
-Preheat oven to 350
-In medium bowl, stir together graham cracker crumbs and cinnamon.
-Add melted butter and stir until it’s incorporated.
-Evenly press the crumb mixture into a 9 inch pie plate and up the sides a bit
-Bake for 12 minutes
3 large egg yolks
1/4 tsp cream of tartar
two 14 oz. cans of sweetened condensed milk
2/3 C key lime juice
-In large bowl beat the egg yolks with the cream of tartar until frothy and light in color
-Mix in the sweetened condensed milk
-Add the key lime juice and mix until incorporated
-Pour filling into baked pie shell
-Bake for 15 minutes or until set
-Cool on a rack and then refrigerate overnight before serving
1 C heavy whipping cream
1/4 C powdered sugar
1 tsp vanilla
-Beat all ingredients in a chilled bowl until stiff peaks form
-Garnish pie and serve. Enjoy!
