This recipe made a small 7″ pie good for 3 people, but you can double the recipe for a standard pie dish! If making the smaller pie, you will only need to use half of the basic pie crust recipe.
CLASSIC BLUEBERRY PIE RECIPE
1 Basic Pie Crust Recipe (link below)
1.5 cups blueberries (fresh or frozen, thawed)
1/3 cup sugar
3 tablespoons cornstarch
1/2 tablespoon calamansi juice (or lemon juice)
Egg wash ( 1 egg + 1 tablespoon water)
Sugar for Sprinkling
1.) Prepare your pie dough ahead of time and chill in the refrigerator until ready to use.
2.) Preheat your oven to 425F
3.) Mix all your filling ingredients into a bowl and set aside.
4.) Divide your pie dough in half. Roll one half out into a round sheet as shown in the video, and then place into your pie dish. Be careful not to stretch the dough, but instead guide and mold it into your dish to prevent warping.
5.) Roll the other half out as shown in the video, and cut into even strips.
6.) Place your pie filling directly into your prepares dough dish, and then begin making the lattice as shown in the video.
7.) Brush with egg wash amd then sprinkle with brown sugar.
8.) Bake at 425F for 20 minutes, then lower the temperature to 350F for about another 20 minutes, or until the crust becomes flaky and golden brown and the filling is bubbling through.
