Recipe
Pastry
∙ 2 cups white bread flour
∙ ½ teaspoon salt
∙ ¾ cup of cold water
∙ ½ cup butter / 113 grams (grated)
∙ 1 egg (for egg wash)
∙ flour for dusting
Filling
∙ 500 grams beef short rib
∙ a few slices of Gouda cheese
∙ 1 sprig of thyme
∙ 1 onion
∙ 2 cloves garlic
∙ ½ teaspoon cumin
∙ 1 teaspoon fine coriander
∙ 2 tablespoon Worcestershire sauce
∙ salt & pepper to taste
∙ 500 ml of beef stock (1 bouillon cube)
∙ 2 tablespoons flour
∙ 3 tablespoons canola oil
Bake in an 180°C oven for 30 minutes or until golden brown.
