Easy Veggie Pot Pie!

RECIPE BELOW! Who doesn’t love the comfort of a pot pie?! Best part is, this can be just as comforting as a chicken pot pie, and even be vegan!!

This is one of my go-to recipes! I usually have all ingredients on hand, as long as I pick up pie crusts from the store. You can make your own if you like! I usually just pick some up to make this less labor intensive and less clean up. You do whatever floats your boat! The fresh parsley here is also what makes it so great. You can do flakes, but if you have fresh parsley, go that route!

If you’re wanting this pot pie to be vegan, beware of the frozen pie crusts! Make sure you have a crust that has no lard in it and is made from a type of vegetable shortening instead (Marie Callendars has one, and there’s Wholly Wholesome Organic Pie Shell that’s vegan as well).

INGREDIENTS:
1 russet potato, peeled and diced
1 small onion, diced
2 celery stalks, diced
3 cloves of garlic minced
2-3 c low sodium vegetable broth, divided
1/4 c fresh parsley, minced
1 bag frozen mixed vegetables
2-4 T corn starch
Salt and pepper, to taste
2 frozen pie crusts, thawed

DIRECTIONS:
In a large pot, boil cubed potatoes until soft. Drain.
Steam frozen vegetables in microwave or stovetop.

While potatoes are boiling, cook onion and celery in 2-3 T of vegetable broth until softened. Add garlic and parsley and cook until aromatic, about 1-2 minutes.

Add 1 cup of broth, cooked potatoes, and vegetables to pan. Season with salt and pepper to taste. Mix 4 T corn starch with 1 cup of broth until dissolved. Add to pan and mix. Add more vegetable or corn starch as needed to achieve a thick pie filling consistency. Remove from heat.

Preheat over to 400F. Fit 1 thawed pie filling to your baking dish (I use a 10.5 x 7.5). Spoon pie filling into the crust. Place other thawed pie crust on top. Pinch the edges to seal. Cut slits and bake until golden brown, about 30 min.
Let sit about 10 minutes before serving. Enjoy!
