DELICIOUS KEY LIME PIE *BAKED IN THE NINJA FOODI

A walk through how to make this Homemade Key Lime Pie. You will see how to make a homemade crust, the filling and a homemade whipped cream. **Filling**
– 5 egg yokes (no whites)
– 1 cup key lime juice (you can substitute with regular lime juice)
– Two 14 oz cans of sweetened condensed milk
– Zest of a lime (about 2 tsp) (**save the zested lime, slice and cut into halves for decorating afterward**)

**Crust**
– 1 and 1/2 cup crushed graham crackers
– 1/3 cup sugar
– 5 tbs butter (melted)

**Whipped Cream**
– 1 cup heavy cream (or whipping cream)
– 2 (heaping) tbs confectioners sugar
– 1 tsp vanilla extract

*Combine crushed graham crackers in mixing bowl, mix, add melted butter, mix well until a “sandy” texture. Using a spring form pan (or baking dish/pan) add parchment round **optional**. Spoon crust mixture a little at a time into spring form pan, layer bottom, level and compress, push up along sides of pan pressing as you go. (spoon is helpful here) Once finished, set on reversible rack (in lower position) and Bake in Foodi *Bake option 350° for 10 minutes. let cool.
*Add key lime juice, eggs, and sweetened condensed milk to mixing bowl, whisk and/or blend well using an electric mixer. Add your lime zest and fold into mixture. Pour filling into “cooled” pie crust. level with a spatula. I recommend covering with foil, either the spring form pan or you can pinch foil to reversible rack handles (to avoid browning on top of pie) Bake in the Foodi using the “Bake” option on 350° for 22 minutes. While pie is baking you can make your whipped cream. *Add heavy cream, confectioners sugar, and vanilla extract to mixing bowl and using an electric mixer, whip until thick (or desired thickness) Set in fridge until use. *When Pie is Done* Let cool on counter for 2 hours, it will continue to “set”. After 2 hours place in refrigerator for a minimum of 6 hours. After 6 hours you may “frost” the entire pie or small dollops. Decorate with the cut lime and whipped cream however you’d like, sprinkle zest on top for garnish. **TIP** You can use green food coloring or fresh avocado to get a green color for your filling!
