Christmas Cake Recipe
Ingredients:

Mix of dried fruits and nuts:
3 ounces / 90 g Raisins
3 ounces / 90 g dried apricots
3 ounces / 90 g prunes
3 ounces / 90 g dried cranberries
2 ounces / 50 g mixed candied peel
2 ounces / 50 g dates
7 ounces / 200 g mix of nuts (almonds, cashews, walnuts, hazelnuts)
50 ml brandy
120 ml water (better tea)
2 ounces /50 g sugar

Dough:
7 ounces / 200 g butter (slightly softened)
3 ounces / 100 g brown sugar
4 eggs
1 lemon
1 teaspoon vanilla sugar
1 1/2 teaspoon mixed spice (ground cinnamon, freshly ground nutmeg, ground ginger, ground cardamon, ground cloves, ground allspice)
1 ounces / 30 g orange jam (any jam of your choice is possible)
7 ounces / 210 g all-purpose flour
1 teaspoon baking powder

How to cook:
Chop all dried fruits equally
Mix together sugar, tea and alcohol
Boil for 2 minutes until sugar dissolves
Let cool and pour in to the mixture
Leave this mixture overnight or day or if you don’t have time for half an hour

Heat the oven to 284 °F / 140 °C
Cream the butter with the brown sugar until light and fluffy
Add vanilla sugar
Add eggs one at a time to the butter mixture
Rub the lemon zest
Squeeze the juice
Transfer the mixture to a sieve and drain
Add lemon zest, juice
Add liquid from the dried fruits mixture
Add jam
Add spice mixture
Sift flour and baking powder together
Mix all the rest ingredients

Bake for about 75-90 minutes – Check readiness with a skewer.
